Mashed Potato Taste-A-Like
Here's a great substitute for mashed potatos, (which I happen to love my taters).
Steam some Cauliflower, fresh or frozen, makes no difference.  Once its soft mash it, (or use a beater), add a little butter, add in a little Half & Half or Sour Cream, (I like the sour cream), salt and pepper to taste.
Hint: Add other ingredients as you are mixing the cauliflower so you don't get it too soggy.
Fried Green Tomato
(Ahhh, what a treat for your family and friends)
Please keep in mind that all seasonings may be adjusted to your taste. 
Basic Flouring:
* 3 Parts cornmeal (I use the white cornmeal)
* 1 Part flour
* Salt (adjust to your diet) ( I use sea salt)
* White Pepper ( White pepper is also great used in fried chicken flouring)
* Dash of Garlic Powder
* Pinch of sugar (takes out some of the bite)
Egg Wash:
Mix eggs and milk or
buttermilk in bowl.
Slice green tomato into 3/4 inch slices, (this may be adjusted to your taste, could be smaller slices).
Let the slices soak in the egg wash (in the fridge, covered) for about 1/2 hour.
Dredge the slices through the flour mix and place on waxed paper, when done, repeat dredging.
Frying:
You may use any of the following to fry your Slices in:
Bacon Grease, olive oil, canola oil, or any oil blend.
If you are frying fish you can fry slices right along with your fish (oh hah, that is good).
Drain on paper towels and dash with some good ole hot sauce if you like.

P.S.
You can also use this for Zuchini or Squash.
