| Ham Balls - Oh Boy, are these GOOD! 1 1/2 lb. Ground Ham 1/2 lb fresh ground pork 1 cup bread crumbs 1/2 cup milk 2 eggs Directions: Mix all together and form into 1 inch balls. Place in shallow baking pan and bake for 15 minutes at 350 degrees. When all are baked place them in a crock pot with the sauce and cook on low for two hours. Sauce: 1 can tomato soup 1 tsp dired mustard 1/2 cup vinegar 1 cup brown sugar Directions: Mix all ingredients in crock pot while ham Balls are baking. |
| Spareribs Tangy, not too sweet barbecue sauce and a special way of preparing the ribs that's described here. Ingredients: 2 slabs pork spareribs (about 3 1/2 lbs.) 1 1/2 tsps salt 1/2 tsp freshly (or course)ground black pepper 1/2 tsp crushed red pepper flakes 2 to 3 cups white wine vinegar Barbecue Sauce: 16 oz Red Devil Hot Sauce 2 1/2 tsps crushed red pepper flakes 1 small onion, sliced 1 small stalk celery, sliced 3 cups tomato puree 1 1/2 cup water 1 1/2 cup sugar 1 lemon, sliced Directions: 1)To make the ribs easier to handle, cut each slab between the middle bones into 2 equal pieces. Rub the salt, black & red peppers into both sides of the ribs. 2)Place the ribs in a deep baking dish, cover them, and refrigerate overnight. 3)Preheat the oven to 450. Pour the vinegar over the ribs and bake 1 1/2 hours. Rotate the ribs 2 or 3 times during baking and spoon some of the pan juices over them. 4)Remove the ribs from the baking dish and place in a single layer on baking sheets. (line the baking sheets with heavy aluminum foil for easy cleanup.) Bake at 450 for 1 hour. The ribs should be tender and well browned. This much can be done up to a day in advance. 5)Cool the ribs, cover tightly, and refrigerate. Bring to room temperature for about 1 hour before continuing. Barbecue Sauce: 1)Combine all the ingredients in a heavy pot and heat just until hot. Don't bring to a boil or the sauce will turn dark and become thin. 2)Cool the sauce to room temperature, strain, and store in a tightly covered jar in the refrigerator. Makes about 5 cups. To finish the ribs: 1)Preheat the oven to 450. 2)Cut te slabs between the bones into individual ribs. Place the ribs in a baking dish large enough to hold them comfortably. 3)Spoon enough of the barbecue sauce over them to coat lightly. 4)Cover the pan with aluminum foil and bake until heated through, about 20 minutes. Serve with additional barbecue sauce on the side. Makes 8 servings. |
