| Meatballs 1 lb. ground beef or chuck 1 med. onion 1/2 cup oatmeal or bread crumbs 1/2 cup heavy cream or half and half 1 tsp. salt 1/4 tsp. white pepper 1/2 tsp. dried dill (optional) 1 tablespoon butter (the real thing!) Mix oatmeal (or bread crumbs), cream, salt and white pepper and let sit a few minutes to soften the oats. Cut onion in half and chop half the onion in very small pieces. Slice the rest and put onion in small saucepan (big enough to hold meatballs) and barely cover with water. Mix together ground beef, chopped onion and cream mixture. Melt butter in skillet. Roll beef mixture into meatballs and brown in butter (med. high heat) for approx. 8 min. The key to good meatballs is to have a very browned outside. Almost burned but not quite. Drain on paper towels and fry additional meatballs if needed. Meatballs can be simmered in a crockpot with a variety of sauces such as: Brown gravy Peppered gravy Your favorite pasta sauce Serve meatballs over: Egg noodles Rice Pasta Potatoes |
