"How to cook a crayfish"

Recipe 1. Boiled Crayfish

Get as many crayfish as you can--at least four (see above). Find a metal container big enough to hold the crayfish. It should have lid. Now pour water into the container, and bring that to a boil. Keep the lid on--the water will boil faster. Add a little bit of Old Bay Seasoning to the water. If you don't have an Old Bay Seasoning, you can use salt and lemon juice but Old Bay Seasoning is best. Now drop all the crayfish into the water at once. The water should cover the crayfish. If not, add more water.

Wait until the crayfish turn red, then wait another minute. Separate the water from the crayfish, and arrange the crayfish neatly on a plate. Now,
invite over a good friend with whom to eat the crayfish.
Recipe 2. Crayfish Pie

This recipe comes from livecrawfish.com.

Melt butter in a large skillet. Saut� onion, celery, and bell pepper until vegetables begin to wilt. Add flour and mix thoroughly. Cook 2 minutes. Remove from heat and stir in crayfish tails and garlic. Return to heat and cook for 2 minutes. Add hot sauce, Worcestershire sauce, and green onion tops. Cook for 2 minutes. Stir in heavy cream.  Remove from heat. Add egg a little bit at a time (be careful not to scramble). Stir in bread crumbs.

Pour mixture into 9-inch pie crust. Brush edge with olive oil.  Bake at 375 degrees Fahrenheit for 20-25 minutes.
Recipe 3. Crayfish Pasta

Here's another one from livecrawfish.com. Because I am half Italian, I felt obligated to include this recipe. However, I don't know how many crayfish reside in Italian waters.

Cook pasta according to the directions on the package. Drain, rinse under cool water, and drain thoroughly.

Melt butter in a large skillet. Saut� onion and garlic until vegetables begin to wilt. Add half and half and cajun seasoning or salt and pepper to taste.

Cook 5-10 minutes, until the sauce thickens. Add pasta. Toss well. Stir thoroughly over very low heat for 10 minutes. Serve immediately.
Next time, let's just steam them...
