Satay's ultimately dandy cupcakes!

These cupcakes are really neat, because they don't require a lot of ingredients, and you don't have to be good at cooking to make them turn out really kewl. Best thing is they require hardly any effort :D
So let's get cooking my dearest chums!

Ingredients:
2 eggs
200 grams (1 cup) caster sugar
125 grams butter, at room temperature
1 teaspoon vanilla essence
300 grams (2 cups) self-raising flour
180 mL (3/4 cup) milk


Method:
Preheat oven to 180�c

Use an electric beater to beat the butter, sugar and vanilla essence until pale and creamy.

Add eggs one at a time, beating well after each.

Stir in half the flour with a large metal spoon followed by half the milk. Repeat with remaning flour and milk.

Spoon the mixture into paper muffin cases and shove it in the oven. Let it cook for about 20 minutes or until golden brown.
To know if they are ready, push a skewer into and it and it should come out clean.
Once they have cooled down, you can ice them :)


Need some ultimately joyful icing to accompany your freshly made cupcakes? Here is my favourite type of icing. It tastes relly sweet and nice! Yay!

Whipped butter icing.
150 grams unsalted butter, softened
200 grams icing sugar
1 teaspoon vanilla essence

For this, you can add food colouring, cashews or 100's & 1000's if you like :)

Method:
Beat butter and icing sugar together until smooth and pale.

Add vanilla essence and whatever else you want and beat a little more.
