| Beef Stroganoff without the Carbs This is a Suzanne Somers Recipe from her book "Get Skinny on Fabulous Food" It is one of our favorites. I often make it with no meat and I have made it with chicken, it's great any way you choose. the pickles do sound a bit weird but it is really good. 2 1/2 lbs beef tenderloin (I use beef cuts for stir fry) 1 Tbsp unsalted butter (I use salted butter) 2 1/2 Cups sliced mushrooms 1/4 tsp salt Freshly ground pepper 1 1/2 cup dill pickles cut into julienne strips 2 Tbsp Pickle juice 2 cups heavy cream 2 Tbsp vegetable oil 1 recipe Sauteed Spinach with Garlic & Olive Oil |

| Trim any silver skin on the trenderloin then cut across the width into 1-inch slices. Slightly flatten the slices by pressing with the palm of your hand. Set aside. (Or you can use the pre-cut stir fry beef, The Easy Way) Open package and set aside. Place a skillet over medium-high heat, add the butter and melt. Saute' the mushrooms with salt and pepper until golden, about 5 minutes. Add the pickles and juice and cook until juice evaporates slightly, about 2 minutes. Add the cream and cook until reduced by half. Meanwhile, season the meat with a little salt and pepper (the sauce will be salty from the pickles.) Heat a large skillet over high heat, add the oil, and heat until it starts smoking. Sear the meat briefly, 2 minutes per side for medium rare. Place the sauteed spinach on the plates, top with the beef, then ladle the warm sauce over the top. |

| To a hot skillet, add the olive oil and the peeled garlic. Saute' the garlic for 5 minutes, until it begins to brown and get soft. Add the spinach to the pan and toss in the hot oil until each piece is coated and just wilted. Season with salt and pepper. Serve immediately. |

| Rueben Dip This is a yummy dip for parties. It can be served with little rye breads or vegetables or anything you like. 1 Can Sauerkraut (14 oz. drained) 1 pkg. (8 oz.) cream cheese 1 pkg. (8 oz.) swiss cheese 1 pkg. (8 oz.) corned beef 1 1/2 cups sour cream Cube swiss cheese and corned beef - mix all and heat slowly. I use a small crock pot. |
