Baked Meatballs
(Can be found on
Atkin's site)
  RECIPES
Ingredients:
1 tablespoon olive oil
1/2 onion, finely chopped
3 garlic cloves, minced
1 1/2 lbs ground beef
(modified from origional)
1/2 cup grated parmesan cheese
2 eggs
1/2 teaspoon salt
1/4 teaspoon pepper




Directions:
Heat oven to 375.

In a skillet, over high heat, cook onion for 5 minutes, until softened; add garlic and cook 1 minute more.

Transfer to a bowl and mix in ground beef, cheese, eggs, salt and pepper.

Roll golf-ball size meatballs; arrange on a jelly roll pan.

Bake 20-25 minutes, until browned and cooked through.

Pancakes
(Taste alot like faux french toast.Yummy!)

I doubled this recipe and was able to make 8 meduim size pancakes. I ruffly estimate 5 carbs each. Make sure you caculate for yourself.




Ingredients:
8 heaping tbs of ricotta cheese
2 eggs
1 tsp vanilla
2 tsp splenda
dash nutmeg
dash of cinnamon


(I like extra cinnamon and aced the nutmeg cause I didn't have it)


Directions:
Mix all together and cook in butter.
Make sure the pancake is thoroughly cooked on bottom before flipping.


Best served with sugarfree syrup.
