We would like to send out thanks to Cassandra Cotton who was our previous V.P. of Fundraising for her efforts and working with us, and we shall miss her as an officer, but fear not she is still a member with us. At the November meeting the position was opened up on the floor for discussion, and Amy Stewart was nominated for the position and she accepted it. So an election was held, and a votes cast. It was approved that Amy Stewart is now our new Vice President of Fundraising, and we all welcome her to that position, and look forward to working with her. CONGRATS, and WELCOME Amy!! Healthy Recipes: Entree Rack Of Lamb With Orange Carrot Stuffing: Ingredients: 1 cup chicken stock 2 carrots, peeled and shredded 1 zucchini, shredded 1 onion, chopped 1 celery stalk, chopped 1 medium orange, peeled, seeded and chopped in small pieces, peel grated 3 cups dried whole wheat bread cubes 1/2 cup fresh parsley, chopped 1/4 tsp. ground nutmeg 1 tsp. dried sage 1 tsp. dried thyme 1 tsp. dried mint 2 racks of lamb, 8 ribs each, French cut, well trimmed kitchen string 2 Tbs. orange juice concentrate, thawed |
