Chocolate Coverd Mice

A seasonal favorite that is FUN to make and give! 
OR
use as  table / platter decorations...
even good for eating (except the tails!)

Chocolate Cake
This is THE treat to make for special occassions or extra nice treat... different ovens can really affect the tempature, so you may need to watch your method of baking the first few times.
Ingredients
Chocolate almond bark
Marichino cherry's w/ stems
Hershey kisses (solid chocolate)
Peanut halves
  pink or red icing


melt almond bark, cool to tempid
dip cherries, laying on the side to create tail
Place kiss on the end of cherry opposite end of tail
Use a small amount of chocolate to attach  half peanuts to create mouse ears. 
Cool and dot on eyes and nose w/ icing or use mini chips/ M&Ms
Or if you choose NOT to add eyes, call the BLIND MICE, and if there is a missing stem on a cherry, tell every one that was the mouse caught by the farmers wife!
Ingredients
1 pkg devils food cake mix (18.25 oz)
1 pkg chocolate fudge pudding (3.9 oz)
4 large eggs
1 Cup sour cream
1/2 Cup WARM water
1/2 Cup vegetable oil

1 pkg chocolate chips
     OR
Filling (optional- below)
  1- 8oz cream cheese, softened
  1/4 cup powdered sugar
  1 egg, beaten
combine all ingredients until well blended, set aside
Place rack in the center of oven, preheat to 350 degrees
Lightly mist 12 cup bundt pan with cooking spray then dust with 2 teaspoons of dry cake mix or flour, shaking out excess - set aside

CAKE BATTER
Place all cake batter items in large mixing bowl and blend w/ electric mixer on low for 1 minute.
Stop machine and scrape dwon bowl well,
Increase speed to medium for 2-3 minutes, scraping dwon bowl again if needed,
Batter should look thick and well blended w/ no lumps.
Fold in chocolate chips and blend well, with spatula
OR if making filled cake, fill pan
RESERVING
2 cups of batter... pour cream cheese mixture over batter, keeping it towards the center.... then use last 2 cups of batter to cover.
Bake for 40-50 mins, checking for doneness every 5 mins after the first 40 mins.
HINTS
Filled cake will take longer to bake, but check every 5 minutes DO NOT OVER BAKE!
Cool on wire rack about 10 -15 mins in pan then turn out on plate.
Sprinkle w/ powdered sugar or with a
                   
Simple glaze
(Powdered sugar, small amount of milk and              flavoring (vanilla, almond, oranage extract OR
omit milk and use strong, cold coffee!)

Chocolate chip cake can be served warm or  reheat in microwave by the slice for 15-20 secs

Cocoa/spice
Zucchini Muffins



heat oven to 350 degree F
in MEDIUM bowl mix

2 Cups grated zucchini
2 teaspoons vanilla
1/4-1/2 cup cocoa
mix well


In largest bowl
3 eggs
2 cups sugar
1 cup oil
add the zucchini mix

in large bowl
Sift together
3 cups flour
1 teas baking Soda
1/2 teas. baking powder
1 teas salt
1 teas cinnamon
Optional Spices
1/4-1/2 teas each
Nutmeg, cloves
cardamon, allspice
Mix flour mix to sugar/cocoa mix
until just moist for muffins -
IF you mix them more,texture will be more like cupcakes

Bake 20-25 mins for muffins
40-45 mins for loaves
remove from pan and cool on wire rack
store loosely covered.
Try just before baking,
sprinkle top with equal parts and/or combinations of
Brown sugar, oatmeal, chopped nuts
chocolate shavings, cake crumbs
Test doneness by touching lightly,
they should sping back, but look moist
