We have eaten this six mornings out of seven for the past two years, and still think it's the best thing to have for breakfast. It tastes good hot or cold, it sticks to your ribs in a really serious way, and it's easy to make. The ingredients are all dry, so it travels well for camping or visits to friends' houses. It seems very simple, and it is. We've tried other ingredients, but this is the only way we ever eat it now.
If you're always in a hurry, make a batch and refrigerate it. It's so good cold you won't bother to microwave it. Makes a great snack any time.
A note about organic ingredients: in this recipe I specify which ingredients should be organic for this to taste as good as it does when I make it. Non-organic raisins taste bitter to me, and non-organic apples have dangerous levels of pesticides and should be avoided. I haven't noticed a taste difference in the oats, but I buy organic oats.
1 cup thick-cut (Scottish style) oats
2 cups water
1 organic Gala or similarly crisp, sweet apple, cored and diced
¼ cup organic Thompson raisins
1 tsp cinammon (or to taste)
pinch of salt
Bring all of the ingredients to a boil, stirring occasionally. Reduce to a simmer, stirring it occasionally, for about 20 minutes or until all of the water has been absorbed. Serves two.
