I support much of what LE stated but be forewarned that if it does not go well, a more back door approach may be taken by your wife.
She could appoint someone else, an elder for example, to be given Power of Attorney for medical decisions. This is legal and pretty much binding under Canadian law unless the appointed person could be proven incompetent (I'm leaving that alone right now - smirk) or unable to fulfill this role.
So proceed with caution.
First she does not really need your permission about blood. Her body - her decision.
Where you come in is supporting that position in an emergency situation where she is unconcscious.
God willing you will never be put in that position. Odds are you won't. I am not often one to suggest inaction but in this case it may be better for you.
As mentioned by others, once it is known you are "associating with apostates" extreme pressure will be put on your wife. Those social invites will stop since they are basically thinly veiled recruiting attempts.
If you let the matter drop, what happens. Pretty much nothing. Unless the unthinkable happens.
Then if she is unconscious, she will have her signed card. If the doctors ask you to override it, make that decision then. Weighing risk, your wife's choice, benefits vs consequences etc.
You could be stirring up a hornets nest for something that may never happen. I see no upside for meeting with him at this point. Since they will just circumvent you later anyway.
Poker analogy - Don't show all your cards till ya have to.
