| MOM'S MEATLOAF |
| 1 pound lean ground beef 3/4 cup finely crushed crackers 1/4 cup chopped onions 1 egg garlic powder salt and pepper to tatse 1/4 cup milk diluted tomato paste Set asside the ground beef and tomato paste. In medium size bowl, mix egg well with whip. Add onions, spices. Stir in crackers. Stir in half of the milk. Add ground beef. Mix well. I always use my hands to do this. After mixing well, make sure the mixture is moist. Mom always said that the secret to meatloaf is to make sure it is wet. If not, add the remaining milk. Put into a loaf pan. Mix water with tomato paste. Don't get it too thin or thick. Pour it over the meatloaf in the pan. I always freeze the remaining tomato paste mixture. Bake 350 degrees 45 - 60 minutes. Always check to see that it is done before removing from over. |
