Ground nut Soup ||| Hot Pepper Soup ||| Palm nut Soup

||| Groundnut Soup |||

  • 1/2 lb. of beef, lamb, or chicken pieces
  • 1/2 onion, diced
  • 4 cups of meat stock (or 2 stock cubes)
  • 1 tbsp. chopped or grated fresh ginger
  • 1 large onion
  • 1 chilli pepper
  • 1/2 of a 10 oz. can of whole tomatoes
  • 6 tbsp. of smooth peanut butter (preferably unsweetened and unsalted)


Steam meat with seasoning and diced onions. Add whole peeled onion, pepper, ans stock (or 6 cups of water), and boil for 25 minutes, or until onion is soft. Add peanut butter.

Remove onion and pepper and puree together with tomatoes to a smoth paste. Add to the pot. Simmer for a further 1/2 hour or until a trace of oil appears on the top of the soup.

Serve with fufu, rice, or boiled yams.

  • 1/2 lb. stewing lamb
  • 1/2 lb. beef soup bones
  • 1/4 cup diced onions
  • 4 cups of meat stock
  • 1 large onion
  • 1 hot chilli pepper
  • 1/2 of a 10 oz. can of whole tomatoes
  • 1 boiled egg (or 4 butter beans)
  • 2 pieces of fresh or smoked fish (1 lb.)


Steam the lamb and soup bones with seasoning and diced onions in a large stock pot. dd whole peeled onions, pepper, and stock (6 cups of water if using stock cubes). boil for 25 minutes or until onion is soft.

Remove onion and pepper and puree together with boiled egg (or butter beans) and tomatoes. Blend to a smooth paste and add to the pot. Add fish and 2 cups of water.

Serve with your choice of fufu, boiled potatoes, boiled rice, or bread.

||| Palm Nut Soup |||

  • 3-4 pieces of Pig's Trotter (optional)
  • 1 lb. stewing lamb
  • 1/2 onion, diced
  • 4 cups of meat stock (or 2 stock cubes)
  • 2 chilli peppers
  • 2 medium onions
  • 1/2 of a 10 oz. can of whole tomatoes
  • 2 large mackerel
  • 2-3 pieces of smoked fish
  • 1 28 oz. can of palm nut puree


Steam meat with seasoning and diced onions for 15 minutes, add the stock (or 4 cups of water), pepper, and whole onions. cook for a further 1/2 hour until onions are soft. Remove onions and pepper and puree together with tomatoes to a smooth paste and return to pot.

Meanwhile, clean and cut mackerel into 2 pieces. Season with seasoning salt and place on a grill. Grill for 5 minutes on each side and add soup. Add all other ingredients and 2 cups f water to the pot and simmer for another 45 minutes to 1 hour. Palm oil will usually appear on the surface of the soup when cooked. This may be strained off the soup if desired.

Serve with fufu, boiled yams, or boiled plantain.
