| ||| Palm Nut Soup |||
- 3-4 pieces of Pig's Trotter (optional)
- 1 lb. stewing lamb
- 1/2 onion, diced
- 4 cups of meat stock (or 2 stock cubes)
- 2 chilli peppers
- 2 medium onions
- 1/2 of a 10 oz. can of whole tomatoes
- 2 large mackerel
- 2-3 pieces of smoked fish
- 1 28 oz. can of palm nut puree
Steam meat with seasoning and diced onions for 15 minutes, add the stock (or 4 cups of water), pepper, and whole onions. cook for a further 1/2 hour until onions are soft. Remove onions and pepper and puree together with tomatoes to a smooth paste and return to pot.
Meanwhile, clean and cut mackerel into 2 pieces. Season with seasoning salt and place on a grill. Grill for 5 minutes on each side and add soup. Add all other ingredients and 2 cups f water to the pot and simmer for another 45 minutes to 1 hour. Palm oil will usually appear on the surface of the soup when cooked. This may be strained off the soup if desired.
Serve with fufu, boiled yams, or boiled plantain.
