Johnny'S Meatballs & Gravy

Meatballs :  1 lb Hamburger...  1/2 tsp Oregano....

1/2 tsp Thyme...1/2 tsp Salt...1 tbsp Black Pepper...

1 cup Oatmeal.....1 egg.....1/2 cup  finely chopped onion....

2 tsp garlic....1/4 tsp nutmeg

Mix above ingredients well, form into 1 inch meatballs ( keeping water on hands to help seal meatballs ). Place meatballs on cookie sheet and bake at 375 degrees for 15 mins .  Make gravy while meatballs are baking : use 2 packages of brown gravy mix, fix according to directions, add 1/4 tsp Cayenne Pepper (or to taste ).... 1/2 tsp nutmeg....salt & pepper.  Put gravy in crock pot, add meatballs and cook on low for 1 hour.    Enjoy ....

CHICKEN SPREAD

1 5oz can of Swanson's Canned Chicken in broth or water           (DO NOT DRAIN) (located in tuna section of  store)
1 eight oz pkg Philadelphia cream cheese (can be low fat, no fat, full of fat doesn't matter)

In bowl mix thoroughly cream cheese and canned chicken liquid included. Mixture will appear soupy until next day.  Refrigerate overnight and serve with crackers!!!!
Thats it!!!!  When serving, I just spoon out on dish and surround it with crackers.   Sister-in-law makes it and shapes into a log and coats with parsley flakes!   Some will roll in nuts!!

Chicken Salad

1lb or more white seedless grapes-cut in half

4 diced celery sticks

3 boiled chicken breast-diced

1/2 cup of pecans

Hellmann's mayonnaise or other Mayo (your choice) as much as you want.   Stir all ingredients together. Salt and Pepper to taste. GREAT with Ritz crackers or other crackers. ENJOY!!

1 sm box cheese crackers
Mix 1 pt Wesson oil, 3 TBSP Worcestershire Sauce, 1 TBSP Seasoned Salt, 1TBSP Garlic Salt, 2 or more TBSP Tabasco Sauce ( to taste )
Mix all cereal, nuts & pretzels in large roaster pan, then mix oil, sauces & salts. Shake well & pour over cereal mix. Stir well, to mix.
Bake in a 225 degree oven for 1 1/2 hours, stirring every 20 mins till done.

JALAPENO SAUCE
(Hot Hot Hot)

1 # jalapeno peppers, stems removed
2 onions peeled and quartered
6 cloves garlic
1 lge can whole tomatoes
water to just cover
salt to taste

Cook till tender, drain and put thru blender or food processor till smooth, Store in fridge in very clean jar with lid. Can be used for sandwiches or like salsa.

This is called "The Stuff"

 1 1/2 pounds hamburger

16 oz. 1 inch wide noodles

8 oz. package of cream cheese

8 oz. package sour cream

2-6 oz. cans of tomato sauce

1-3 cup package of grated cheddar cheese

Brown and Strain hamburger. Boil Noodles and Strain.  After that combine everything, noodles, sauce, hamburger, cream cheese, sour cream, into large bowl, make sure it is all mixed thoroughly.  Scoop mixture into cassorole dishes.  Sprinkle grated cheddar cheese on top of cassorole dishes.   Bake in oven, at 350, for 20 minutes.

Leftover Turkey Casserole

1 box stuffing mix

1can of cream of mushroom soup ( undiluted )

1 container  sour cream

Grated cheese

Fix stuffing as directed on box.  Mix soup & sour cream together.  Dice turkey.  Layer turkey , then stuffing then soup mixture in a casserole dish.  Top with grated cheese.  Bake at 350 for 1 hour

Tater Tot Casserole

1 -32 oz bag of tater tots
1 cup sour cream
1 can cream mushroom soup
1/2 medium onion finely chopped
shredded cheddar cheese
salt and pepper (to taste)

Leaving out cheese, combine all ingredients. Bake in 9 x 13 greased baking dish
in 350 degrees oven for 1 hour. Cover with cheese and return to oven until cheese melts.

Sweet Potato Casserole

3 large sweet potatoes
3 granny smith apples
3/4 cup firmly packed brown sugar
1 teaspoon grated orange rind
1 teaspoon ground cinnamon
1/4 cup butter (cut up)

Cook sweet potatoes in boiling water to cover for 45 minutes. Drain and cool slightly.
Peel sweet potatoes and cut into 1/4 in thick slices.
Peel, core and thinly slice apples into rings. Combine brown sugar, orange rind and cinnamon.
Arrange half of potatoes slices and half of apples slices in a lightly greased 9 x 13 dish.
Sprinkle with half of brown sugar mixture and dot evenly with butter. Repeat procedure with remaining
ingredients. Bake at 350 degrees for 1 hour...serve warm serves...6 to 8 prep time...45 minutes

TAMALE BAKE

Serves 10 to 12 people 1 and 1/2 cups ripe olives(pitted and sliced)
2 No.2 cans canned Tomatoes
3 small onions
3 cups kernel corn(canned)
1 green pepper diced
2 1/2 Teas. salt
1 1/12 cups celery
4 1/2 Teas. chili powder
3 Table. oil (drippings)
4 1/2 Teas. Worcestershire Sauce
1 1/2 lbs Gr. beef
1 1/2 cups grated Amer. cheese
3/4 cup corn meal
Method Cook vegetables in oil until tender, add meat and cook until lightly brown. Stir cornmeal into tomatoes and cook. Stirring about 10 minutes. Add to meat and vegetables stir in corn, seasonings and olives. Pour into greased casserole and top with cheese. Bake at 350 degrees. 45 min. to hour.

ENCHILADO DINNER


1 box beef taquitos
1 can Rotel Tomatoes
1 can Red enchilado sauce
1 can cream of mushroom soup
1 large bag of shredded cheese your choice
Spray casserole dish with cooking spray. Lay Taquitos in casserole. Mix all three cans together and pour over Taquitos. Sprinkle all of shredded cheese on top and place in 375 degree oven. Set timer for 45 minutes. It will be golden brown on top and the Taquitos will swell up so they taste like homemade Enchiladas.
If you want to use Chicken Taquitos, get green enchilada sauce. For larger family gathering, recipe may be doubled or tripled in size.
It's so easy and tastes great!!

SCALLOPED CHICKEN

16 slices Bread Cubed and dried
(I used 1 pkg. unseasoned earthgrains bread cubes)
1/2 tsp salt
4 cups cooked chicken 1/8 tsp pepper
1 C. Chopped Onions
3 eggs
1 C. Celery, uncooked
3 C. milk or chicken broth
1 C. Mayonnaise

Mix all together and put in pan. Before baking, spread 1 can cream of mushroom soup over top and bake 2 hours at 325 degrees. Sprinkle 1 cup of Shredded cheese over top for the last 10 min. also, sliced cheese can be used. This may be fixed the day before and put in refrigerator overnight.

Texas Fudge

1 pound Sharp Cheddar Cheese, shredded
1 pound Monterey Jack Cheese, shredded
1 pound hamburger or sausage (precooked); optional
1/2 jar Thick and Chunky Salsa
3 eggs

Layer cheese and meat (if any) in 9 x 12 in. pan
Top with salsa.
Beat eggs and pour over the top.
Bake in a 350 degrees oven for 1/2 hour.
Let sit 10 minutes. Cut in squares.
Serve with Tostitos. So easy and SOOOOO Gooooood!

ANGEL DELIGHT



Make This The Day Before!!

1 round angelfood cake

2 pkgs. jello instant vanilla pudding (can you sugar free)

2 cans crushed pineapple (drained)

2 small cans mandarin oranges (drained)

1 8oz. or 12oz. container of cool whip  (can use light cool whip)


In deep clear bowl, deep dish or aluminum pan:

tear 1/2 of angelfood cake into small cubes prepare instant pudding according to directions (can use skim milk)
spread 1/2 of the pudding over angelfood cake
sprinkle 1 can of crushed pineapple over pudding
place 1 can mandarin oranges over crushed pineapple
repeat:

add layer of other angelfood cake over mandarin oranges           
spread other half of prepared pudding
add 2nd can crushed pinapple drained
add 2nd can of mandarin oranges
spread entire top layer with cool whip
Cover with foil or plastic wrap and refrigerate overnight
This recipe is already doubled for a large crowd. Can be cut in half!!
Great in the summer too for picnics & bbq's. Very light dessert!!!

Depression Cake

    Stew 1lb. (1 box) seedless raisins in 2 cups water(15 min).

Turn off heat then add 1 cup water, 2 cups sugar & 1/2 cup margarine (1 stick).

Sift together: 4 cups flour, 1sp. salt, 1 tsp. cinnamon, 1 tsp ground
cloves, 1 tsp. nutmeg, 1 level tsp. baking soda. Add to raisin mixture and mix well with spoon.

Bake 350 in oven 1 hour in 2 greased loaf pans or angel food cake pan.   I have also made this and baked in greased mini loaf pans or greased vegetable cans for gifts at the holidays. (Lessen baking time) Freezes well.

COCONUT CAKE SUPREME


1 box white cake mix
1/2 cup of oil
3 eggs
1-8 oz sour cream
1-8 oz cream of coconut
Blend all ingredients together with mixer. Bake in greased and floured 9 x 13 pan at 350 degrees for 30-45 minutes or until done.
Icing
1 can eagle brand milk
1 8 oz tub of cool whip
1 12 oz pkg of coconut

While cake is still hot, pour 1 can of eagle brand milk over cake. After cake is cooled, spread cool whip over cake and sprinkle coconut on top. Refrigerate til time to serve.

NEIMAN MARCUS COOKIES
(Recipe may be halved) Makes 112 cookies

2 cups butter
4 cups flour
2 tsp. soda
2 cups sugar
5 cups blended oatmeal ** Measure oatmeal and blend in a blender to a fine powder.
24 oz. chocolate chips
2 cups brown sugar
1 tsp. salt
1 8 oz. Hershey Bar (grated)
4 eggs
2 tsp. baking powder
2 tsp. vanilla
3 cups chopped nuts (your choice)
Cream the butter and both sugars. Add eggs and vanilla, mix together with flour, oatmeal, salt, baking powder, and soda. Add chocolate chips, Hershey Bar and nuts. Roll into balls and place two inches apart on a cookie sheet. Bake for 10 minutes at 375 degrees.

PUMPKIN-MAPLE PIE



Use your own crust recipe or use frozen

1/2 cup sugar
1/3 cup real maple syrup
1 tsp. ground ginger
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
2 large eggs
1 cup evaporated fat free milk
1 (15 ounce) can pumpkin

Preheat oven to 425*

Beat 1/2 cup sugar and next 5 ingredients at med. speed of mixer until well blended.  Add milk and pumpkin; beat well.  Pour into prepared crust.  Bake at 425* for 10 min.  Reduce oven temp to 350* and bake an additional 50 minutes or until set.  Cool on a wire rack.
I think my grandma must have made pies this way because it  tastes like hers used to. Enjoy!!

CHINESE BOWTIE COOKIES



1 package wonton skin wrappers
(found in produce department)
oil for frying
Powdered sugar

Take one square wonton wrapper, cut in half
Make about a 1 in slit in each half
pull one end through the slit to make bowtie
Continue cutting rest of wrappers
If wrappers are very thin use two together
Put enough oil in skillet to deep fry bowties
Fry bowties in oil till golden brown (they fry
quickly) Drain on paper towels.
Sprinkle lightly with powdered sugar
(I use sifter or strainer to do this)
I store mine in a can to keep crisp!!

PUMPKIN CHEESE CAKE



1 1/2 cup graham cracker or gingersnap crumbs
6 TBS butter, melted
1/2 cup finely chopped pecans or walnuts (op)
1 cup plus 1 TBS sugar
3  8 ounce pkg. cream cheese
1 tsp. vanilla
1 cup canned pumpkin
3 eggs
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. all spice

Preheat oven to 350*
Make crust by combining crumbs with the melted butter and 1 TBS sugar in a medium bowl. Stir well to coat all crumbs with butter, but not so much as to turn mixture into paste, keep crumbly Press the crumbs onto the bottom and about 2/3 of the way up the sides of a spring form pan.  Bake the crust for 5 min., then set aside until ready to fill.  In a large mixing bowl combine the cream cheese, 1 cup sugar and vanilla.  Mix with an electric mixer until smooth Add the pumpkin, eggs and spices and continue to beat until smooth and creamy.Pour the filling into the pan. Add pecans to top of filling if desired.  Bake for 60 to 70 min. The top will turn a bit darker at this point..  Remove from oven and allow to cool to room temperature.  Put into refrigerator.  When cheese cake has chilled , remove the pan sides and slice.  Use dental floss to make a clean cut.

PECAN BRITTLE


2 cups sugar
1 cup light corn syrup
1/2 cup water
2 cups pecans
1/8 tsp. salt
1 tsp. baking soda
1 tsp. vanilla
1 Tbsp. butter
Combine sugar, syrup and water in large heavy frying pan ( I use a cast iron Dutch cooker) Place over med. heat and stir until the sugar dissolves. Cover and cook for 3 min. Remove cover and cook to soft crack stage (280 degrees). Add Pecans, stirring frequently, cook until brittle reaches the hard crack stage (300 degrees) Remove from heat add remaining ingredients. Stir until well blended. Spread on a well buttered 14 1/2 X 17 cookie sheet. As candy cools loosen edges of brittle on all four sides of the cookie sheet. Lift up and pull edges gently to stretch candy as thin as possible. Break or cut off thin portions, Repeat process until all of the candy has been pulled or stretched. Break into irregular pieces after it is cold.

BEST EVER TOFFEE

2 cubes butter
1 c sugar
1c slivered almonds
Put everything in a heavy saucepan and boil until golden brown, stirring constantly. It is important to stir constantly because it will separate if you don't. (you may use margarine but Imperial is the only one that I would use because some margarines don't do well in the high heat.) Pour onto cookie sheet, working fast to spread the toffee because it hardens fast.
Topping: six 5 cent Hershey bars. (I told you that this was an old recipe--they cost more now) Place Hershey bars on top of hot toffee and let them melt, then spread the chocolate evenly over the toffee. You may sprinkle finely chopped walnuts over the chocolate while it is hot. Let it cool completely, then break into pieces with fingers.
IMPORTANT HINT: Place saucepan and spoon in hot soapy water after pouring the toffee or you will have a hard time cleaning them.

Cracker Candy
Put 40 soda crackers in a single layer in a foil lined cookie sheet. Fold edges of foil up to make 3/4" sides. Heat to melt 1 cup brown sugar & 1 cup butter. Pour over crackers and bake @ 350 degrees for 5 min. Until syrup bubbles. Remove from oven and spread large package of milk chocolate chips over crackers. Sprinkle with finely chopped nuts. Press lightly to secure nuts.
Chill in refrigerator and then break in pieces like peanut brittle to serve.
You can also do the same thing with graham crackers. Tastes like toffee.

KARI'S BLACK BOTTOM CUPCAKES
Combine: 1 cup or 8 oz. pkg. cream cheese
1 unbeaten egg
1/3 cup sugar
1/8 tsp. salt
Beat well. Add 1 cup or 6 oz. pkg. chocolate chips. Set aside.
Sift together: 1 1/2 cup sifted flour
1 cup sugar
1/4 cup cocoa
1 tsp. baking soda
1/2 tsp salt
Add: 1 cup water
1/3 cup cooking oil
1 tbls. Vinegar
1 tsp. vanilla
Beat well until combined
Fill line muffin cups 1/3 full with chocolate batter.
Top with 1 heaping teaspoon cream cheese mixture.
Sprinkle with sugar or chopped almonds or pecans.
(I use chopped pecans and sugar.)
Bake at 350 for 30-35 minutes.

GRANDMA'S FRUITCAKE RECIPE


You will need the following:
1 C water
1 C sugar
4 large eggs
2 C dried fruit
1 tsp. baking soda
1 tsp. salt
1 C brown sugar
lemon juice
nuts
1 FULL bottle of your favorite whiskey

Sample the whiskey to check for quality.
Take a large bowl.
Check the whiskey again to be sure that it is of the highest quality.
Pour 1 level cup and drink.
Repeat
Turn on the electric mixer; beat 1 C of butter in a large fluffy bowl.
Add 1 tsp. sugar and beat again.
Make sure the whiskey is still OK.
Cry another tup.
Turn off the mixer.
Break 2 legs and add to the bowl and chuck in a cup of dried fruit.
Mix on the turner.
If the fried druit gets stuck in the beaterers, pry it loose with a drewscriver.
Sample the whisky to check for tonsisticity.
Next, sift 2 cups of salt, or something... Who cares!
Check the whiskey.
Now sift the lemon juice and strain your nuts.
Add one tablespoon of sugar or something.Whatever you can find.
Grease the oven. Turn the cake tin to 350 degrees.
Don't forget to beat off the turner.
Throw the bowl out the window.
Check the whiskey again.
Go to bed.
Who the heck likes fruitcake anyway...

Blend & spread over cooled crust

2 cups boiling water

1 small can crushed pineapple

Dissolve jello with 2 cups of boiling water
Add strawberries and crushed pineapple

Makes 2 Tarts

Pastry

125g butter (15 tablespoons), at room temperature
125ml Sugar (1/2 cup)
1 egg, beaten
500ml Unsifted flour (2 cups)
10ml baking powder (1 Tablespoon)
pinch salt

Filling

4 cups and ½ cup of milk
25g (3 Tablespoons) butter
3 eggs
200ml Sugar (3/4 cup)
40ml Cake Flour (4 tablespoons)
40ml Cornstarch (4 tablespoons)
pinch salt
cinnamon to taste

Preheat oven to 400 degrees F.
Grease two ovenproof pie dishes, or spray with non-stick spray.
Mix the butter and sugar well. Add the egg and mix. Sift together the cake flour, baking powder and salt. Mix the flour mixture and the egg mixture together to form a pastry dough. Thinly line the sides and bases of the pie dishes with the pastry. Neaten the edges and press with fork for patterns.
Bake the pie shells for 10 to 12 minutes or until the edges start to brown. In the meantime, prepare the filling.
Bring the 4 cups of milk to a boil along with the butter in a large pot. Separate 2 of the eggs. Set aside the whites. Beat the third egg, the remaining ½ cup of milk, the two yolks of the separated eggs, sugar, cake flour, cornstarch to a smooth paste. Gradually beat in a little of the boiled milk to acclimatize. Slowly beat this mixture into the pot and stir well and constantly, using a whisk to prevent lumps. Bring to the boil, still stirring often. Beat the egg whites until soft peaks form and then fold into the hot milk mixture.
Pour the filling into the baked shells, sprinkle with cinnamon and cool until the filling has set!

EGGLESS, BUTTERLESS, MILKLESS CAKE

1 1/2 cup flour
1 cup sugar
6 tbs cocoa
1 tsp salt
1 tsp baking soda
6 tbs veg oil
1 tsp vanilla
1 tsp vinegar
1 cup water

Blend all dry ingredients in large bowl. With a large spoon or bottom of cup make three indentations in dry mixture. In this order add oil to one indentation, vanilla to next and vinegar to last indent. Add water and mix well. Bake in greased and floured 9 inch cake pan. This makes one layer Double recipe for two.
Bake in pre-heated 350* oven for 25 to 30 minutes
Recipe can be used to make brownies by adding 1/2 cup sugar and 2 tbs oil. Add chopped walnuts if desired. I like to melt some choc chips in double boiler and make an icing to cover top.

CHERRY SQUARES

1 cup of butter or oleo
1 1/2 cup sugar
4 eggs well beaten
2 cups flour
1 tsp vanilla
1 tsp. lemon or orange extract
1 can cherry pie filling

In large mixing bowl, cream butter and sugar.
Add eggs and flour.
Mix in extract, blend well.
Spread batter onto a greased 15 1/2 x 10 1/2 cookie sheet.
Score batter to make from 28 to 36 squares
Spoon pie filling into center of each square.
Bake 350* oven for 30 min. or until golden brown.
Cut in squares and sprinkle top with powdered sugar.

COCONUT CHEESECAKE

1 cup graham cracker crumbs
1/4 cup sugar
7 tbsp unsalted butter melted and cooled
2 lbs cream cheese at room temp (4 8oz pkgs)
3/4 cup sugar
1 can sweetened cream of coconut
2 tbsp all purpose plain flour
4 large eggs at room temp
1 cup sweetened shredded coconut toasted
1 1/4 cup sweetened shredded coconut toasted (not a misprint)
bittersweet choc glaze for topping cheesecake

Cooking instructions:

1. Position rack in middle of oven and pre-heat to 350. To make the crust, in food processor fitted with metal blade, combine 1/4 cup toasted coconut, graham cracker crumbs,1/4 cup sugar and melted butter. process until crumbs begin to stick together. Cover hand in plastic and press the crumb mix firmly into the bottom and 2 inches up the sides of 9 inch spring form pan. Bake 10 mins till set. Remove and let cool. Leave oven at 350.

2. Make filling. In a large bowl combine the cream cheese and sugar. Beat till well blended with mixer on medium speed. Beat in the coconut cream and flour till combined. Add eggs one at a time and beat well after each. Stir in 1 cup toasted coconut. Pour filling into cooled crust.

3 Bake until top browns and quivers slightly all over when shaken. About 1 hour 20 minutes. Transfer to rack and let cool. Cover with foil and refrigerate overnight.

4 The next day , run a knife around the sides to loosen cake. To top the cake sprinkle with 1 cup toasted coconut. Spoon the lukewarm glaze over coconut. Refrigerate at least 2 hours .

NOTES: Next time I make it I intend to add a little vanilla, I think it will be even better. Also u may have trouble finding coconut cream, it is something I got from filipino store, it is NOT coconut milk. I think u could substitute 1 cup heavy cream for it and not lose any flavor.

Apple Fritters

5 oz Flour
5 fl Water
1/4 t Salt
2 Eggs (separated)
1 T Melted butter
2 Large cooking apples
4 oz Sugar
Lemon juice
Oil for deep frying

Make batter at least 1 hour before required, using following method.
Sift together flour and salt. Make a well in the center.
Add the cooled melted butter and some of the water and eggyolks.
Work in the flour and beat until smooth.
Add remaining water. Leave to stand.
Just before using, beat the egg whites until stiff but not dry.
Fold into batter mix Peel, core and slice apples(slices about 1/4-1/2 inch thick).
Dip into batter and deep fry in very hot oil 175-180C) until golden.
Drain and serve dredged with sugar and sprinkled with lemon juice.

Zucchini Bars

2 cups sugar (white)
1 cup vegetable oil
4 eggs
2 cups peeled grated zucchini
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 cup chopped nuts (optional) I do this
1/2 cup chopped maraschino cherries (optional) have never tried adding this

Combine sugar and oil in a large mixing bowl; mix well.
Add eggs, beating well. Stir in zucchini.
Combine dry ingredients; add to egg mixture, mixing well.
Add nuts and cherries, if desired.
Spoon batter into a greased and floured jellyroll pan.
Bake 350 degrees for 35-40 minutes or until done
(springs back when touched in center). Let cool. Top with frosting.

Cream Cheese frosting:
1 (3 ounce) package cream cheese, softened
1/2 cup butter or margarine, softened
1 teaspoon milk
1 teaspoon vanilla extract
2 cups sifted powdered sugar

Combine all ingredients in a small mixing bowl;
mix until spreading consistency.
Spread on COOLED zucchini bars.
I sometimes double the frosting recipe. It's so yummy.

Creamy Pumpkin Mousse

> 1 can (16 oz) solid-packed pumpkin
1 package (6 servings) instant sugar-free vanilla pudding mix
1/4 cup low-fat (1%) milk
1 teaspoon ground cinnamon
2 cups frozen light whipped topping, thawed

In a med bowl, with an electric beater on med speed
beat the pumpkin mix, milk, pudding and cinnamon until well blended.

Fold in the whipped topping until thoroughly blended,
then spoon into serving bowls.
Cover loosely and chill until ready to serve.

Makes 10 servings or 1 pie.

I also put it in a graham cracker pie crust and
make a pie, reduced fat pie crust.

THE GLAZE
HALF A TEASPOON GROUND GINGER
1 TEASPOON DRY MUSTARD (EXTRA)
2 TABLESPOONS BROWN SUGAR(NOT RAW SUGAR)
THREE QUARTERS OF A CUP OF TOMATO SAUCE
COMBINE ALL THE GLAZE INGREDIENTS IN A JUG & SET ASIDE

COMBINE ALL THE MEATLOAF INGREDIENTS AND GIVE IT A GOOD MIX WITH YOUR HANDS , PUT OIL ON YOUR HANDS & THE MIXTURE WON'T STICK TO YOUR HANDS. PRESS THE MEAT MIX INTO A GREASED OVEN PROOF BOWL (PREFERABLY PUDDING SHAPED )
PUT IT ON AN ALFOIL COVERED BAKING DISH UPSIDE DOWN OR AN OVEN PROOF DISH AND PUT IN OVEN FOR 20 - 30 MINUTES
REMOVE FROM THE OVEN , CLOSE THE OVEN DOOR & TURN IT DOWN TO 180 CEL. (350*)
TAKE THE MEAT LOAF DISH OFF THE TRAY & POUR OFF ANY FAT OFF THE TRAY.
PUT THE MEATLOAF BACK ON THE TRAY & REMOVE THE BOWL OFF THE MEATLOAF.
STIR THE GLAZE WELL & COVER THE MEATLOAF WITH THE GLAZE AND PUT BACK INTO THE OVEN FOR A FURTHER 60 MIN OCCASIONALLY SPOONING THE GLAZE FROM THE PAN ONTO THE MEATLOAF
YOU CAN ADD ANOTHER HALF OF ALL THE INGREDIENTS AND ADD EXTRA TIME FOR COOKING IF YOU WISH TO MAKE A BIGGER MEATLOAF. GROUND BEEF and RICE

2 lbs ground beef
1 medium onion
1 cup uncooked rice
1 medium jar salsa (mild)
Brown ground beef and onion in frying pan until done. Drain excess grease. Add rice and 3 1/2 cups water. Cook over medium heat until rice is tender and water has boiled out stirring occasionally. Add salsa mix well.
This is a very easy dish to make and you can use it as a main dish with a side vegetable. Hope you like it Serves 4-6

PASTIES

Make pie dough : enough for two crust pie
In a bowl mix 1 lb ground beef or venison, add 1 lg onion ( diced ), 4 to 5 medium potatoes ( diced ), salt & pepper to taste.
Roll pie dough as you would for a pie. On one half of dough place meat mixture, put 3 dollops of butter on top, fold dough over to form half a pie. Prick top with fork. There is enough for 2 half pies ( pasties ) or you can make smaller ones.
Bake on cookie sheet at 350 degrees for 1 hr.
My grandmother from Finland made these when I was a child, my family loves them !!!!

BAKE 12-15 MINUTES. UNTIL GOLDEN BROWN. COOL COMPLETELY.
IN A BOWL, COMBINE CREAM CHEESE, GARLIC, AND 2 TABLESPOONS CILANTRO. MIX WELL. SPREAD MIXTURE EVENLY ONTO CRUST.
IN BOWL, COMBINE REMAINING CILANTRO, TOMATOES, BELL PEPPER AND ONION. SEASON WITH SALT AND PEPPER. SPOON SALSA OVER CREAM CHEESE MIXTURE TOP WITH AVOCADO SLICES.

CRESCENT CHEESE BURGER PIE

1# ground beef
1/4 teaspoon dried oregano, crushed
1/2 cup chopped onion
1/8 teaspoon pepper
1 can (8 oz) tomato sauce
2 pkgs ( 8 rolls each ) refridgerated crescent rolls
1 can chopped mushrooms, drained
1/4 cup chopped parsley
3 eggs
1/4 teaspoon salt
6 slices American cheese, or more if needed
1 Tablespoon water

INSTRUCTIONS:

Brown ground beef and onion until onion is transparent and drain of fat. Stir in tomato sauce, mushrooms, parsley, salt, oregano and pepper. Set aside. Unroll 1 package of rolls and separate dough. In lightly greased square pan or I use 8X10 pan and double everything for a larger group. Arrange pieces in bottom of pan with a little bit up the sides. Press these together so the bottom is covered. Separate eggs; beat together whites from 3 eggs and yolks from 2 eggs. Pour half of beaten egg mixture over the pie shell. Spoon meat mixture into shell; arrange cheese slices on top. Spread with remaining beaten egg. Mix reserved egg yolk with water and set aside. Unroll second package of rolls and spread out to cover top. Brush top with the remaining egg yolk/water mixture. Loosely cover edge with foil strip to prevent over-browning. Bake at 350 degrees for 20 min. Cover center of pie loosely with foil and bake 20 min longer. Let stand 10 min before serving. ENJOY!!

BEER UP THE BUTT CHICKEN

1 medium size roasting chicken
1/2 can beer (still in can)
1 shaker black pepper
1 shaker garlic salt
1 shaker chili powder
1 shaker onion powder
1 small bowl BBQ sauce

Take one roasting chicken and dust well inside the cavity and outside with seasonings. Use seasonings to taste. When chicken is seasoned take half can of beer and place it in the cavity of the chicken. Make sure that chicken remains sitting upright, on the side of the grill that won’t be directly over the flame. Now light and heat other side of grill to medium.
Depending on size of chicken, cooking time should be one hour. As chicken cooks, the wings will raise up to indicate that it is done. The wings will look as though it is waving at you. BarBQ sauce can be poured over the chicken after it’s cooked or if you prefer you can brush it on during the last 10 minutes of cooking time.

CORNED BEEF AND CABBAGE

1 lean corned beef boiled and cooled
1 large head cabbage
1 small onion
1 cube butter or margarine

Slice corned beef as thinly as possible. Chop onion.
Melt butter in large dutch oven and saute onions till translucent.
Add corned beef. Cut up cabbage and add to pot.
Don't worry if it all wont fit at first it will as soon as the first cooks down a bit.
Stir it all together so that corned beef is mixed thru out cabbage.
Cover and cook for about 10 mins...salt and pepper to taste.
I always keep some of the corned beef aside for sandwiches.

IRISH STEW
(This recipe came straight from Ireland)

4 strips bacon, cut in 1 inch sq
2 lbs stew meat cut in 1 inch cubes
1 large onion chopped
12 red potatoes
4 stalks celery, sliced
4 or 5 lge carrots, sliced
1 can tomato paste
2 cans beef broth
salt and pepper as needed

Brown bacon in large roasting pan (this recipe cooks in oven).
Add stew meat & brown in bacon drippings.
Remove meat from pan & set aside.
Add celery, onion, carrots to pan & saute until onions go translucent.
Sprinkle 3 tbs flour over carrots, celery, onion & stir in
. Return meat to pan, add broth and tomato paste.
(You can use tomato sauce if you want).
Put in 350* oven & bake for 45 minutes.
Remove from oven & add cut up red potatoes.
Taste to see if you need salt and pepper
Add if needed & return covered roasting pan to oven for 45 additional minutes.
It won't hurt anything if it stays in oven a bit longer.
Serve with Irish soda bread or baking powder biscuits.

Fried Cabbage & Noodles)


1 small head of cabbage (chop in small pieces)
2 sticks of butter (can use margarine)
1 small onion chopped fine (optional)
1# noodles (I use curly edge noodles)

Cook noodles according to package directions. Drain.
In large skillet melt butter added chopped cabbage and onion. Saute til cabbage is tender. Cabbage will cook down. Add drained cooked noodles to cabbage mixture in skillet and stir thoroughly. Add salt and pepper to taste. If for small portion use 8oz bag of noodles.
When growing up this was our Friday night meal, but my family wanted this cooked as a side dish to a meal. I am Slovak and Croation and this is one of many haluskis.

1 small onion finely chopped
2 cloves garlic, minced
Small bell pepper, seeded and chopped
1 lge can crushed tomatoes
2 tsp chili powder (more if desired)
1 14 oz. can chicken broth
1 cup rice

Brown bacon till crisp, do NOT drain. Add onion, garlic and bell peppers. Saute till tender. Add tomatoes and chili powder. Stir in chicken broth and rice. Cover and cook till liquid is absorbed, about 20 minutes over med low heat. It can be cooked in oven just used covered casserole and bake at 350* about 45 mins.

1 14 oz.can vegetable stock
1 2 oz. can tomatoe sauce
1 14 oz. can corn
1 16 oz. can whole tomatoes
1 16 oz. can tomatoe juice
1 16 oz. can cannelloni beans
1 15 oz. can kidney beans
1/2 cup ditalini spaghetti
1 Tbsp. Italian Seasoning
1. Tbsp. onion, dried flakes
1 tsp. rosemary
1 tsp. salt
1 tsp. pepper
1 tsp. garlic
1/4 cup olive oil
1 dried green bell pepper
3 carrots, sliced thin
3 Tbsp. parm cheese
Add all ingredients except ditalini and kidney beans,and cannelloni beans in pot. Cook for one hour on low heat. Add ditalini and cook for fifteen min. on low. Add cannelloni beans and kidney beans and cook for fifteen min on low. Enjoy !

Taco Soup Recipe

1 lb. Ground Chuck
1 small onion
2 cans mixed pinto and great northern beans
1 can white shoepeg corn (yellow does not work)
1/2 jar taco sauce
1 package taco seasoning
1 can diced rotel
1 large can crushed tomatoes

Directions:
Cook meat with taco seasoning (according to directions on seasoning packet).
Drain well. In saucepan or crockpot, put seasoned meat, and rest of ingredients. Simmer for 1 hour. Serve with any of the following:
sour cream
taco sauce
hot sauce
corn chips
shredded cheese

HOMEMADE BATH SALTS
Some of the girls wanted my recipe for homemade bath salts to be put on the web page. I make a batch & then take little votive candle cups, fill them, wrap with net or tissue, attach a label of the fragrance and how much to put in the bath water. Or a pretty jar with lid and stick address label with instructions on front with name of giver. They make easy give-a-ways for birthdays or christmas for women. Men really don't appreciate them.


As follows:
Dilute several drops of food coloring with 1 Tablespoon water in medium size bowl.Add 6 drops of essential oil of any fragrance and mix well. Add 2 Tablespoons jojoba oil to mixture and mix thoroughly. Can substitute baby oil or any massage oil.
Pour 2 cups of Epsom salts slowly into bowl stirring to mix. Continue to stir till all color is absorbed.
Spread on wax paper covered cookie sheet and dry thoroughly (at least over night) package and give away or use for soothing bath. Place 2 or 3 tablespoons under warm running water in bath.
You can search on the net and find Foaming Bath salts made with liquid soap and Rock Salt. I have made it too.
