| Orange Blossom Cookies Ingredients: 3/4C sugar 2 C flour 1C margarine 1 tsp baking powder 1 tsp vanilla 1/2 tsp salt 1 egg 1 C carrot,finely shredded Method:Cream sugar and margarine.Beat in egg and vanilla.Gradually add sifted dry ingredients.Beat on low speed just until blended.Stir in shredded carrot.Drop by neat rounded spoonfuls onto ungreased cookie sheets.Bake at 350* for 8-12 minutes or until lightly browned.Frost with Orange Blossom Icing when cooled. | Best-Ever Chocolate Chip Cookies Ingredients: 2/3C margarine 2 tsps vanilla 2/3C shortening 2 eggs 1C white sugar 2 1/2C flour 1C brown sugar 1 tsp baking soda 1 bag chocolate chips Method: Cream margarine and shortening in large bowl.Add sugars and beat.Add vanilla,then eggs, one at a time,beating well after each addition.On low speed,gradually add flour mixed with baking soda.Blend only until dry ingredients are incorporated.Stir in chocolate chips.Drop by spoonfuls onto ungreased cookie sheets.Bake at 350* for 8-10 min;cookies should be very light brown.Remove from oven and transfer cookies to wire racks to cool. |
| Soft Oatmeal Cookies Ingredients: 1 1/2C flour 2 eggs 1 tsp soda 1 tsp hot water 1 tsp salt 2C quick oats 1C shortening 2/3C cocoanut 3/4C brown sugar 1 1/2 tsps vanilla 3/4C white sugar 1C chocolate chips(opt) Method: Cream shortening with sugars.Add eggs and beat.Add hot water to creamed mixture,then gradually add dry.Beat on low speed just until mixed.Stir in vanilla;stir in oats,cocoanut and chocolate chips.Drop by tablespoonsful onto non-stick cookie sheets.Bake at 350* for 8 minutes or until LIGHTLY browned.Cool completely on cooling racks,then store in containers(cover cookies with saran first). |
