How To Cook A Turkey

Here are some cooking times for different size turkeys.  These times are based on roasting the bird in a 325 degree oven.  Some recipes call for a higher temperature for the first 30 to 45 minutes and some recipes call for a 350 degree oven, so the overall cooking time for these birds will be reduced.  A good rule of thumb is to check the bird about 30 minutes before you expect the turkey to be finished.  Remember that the turkey is only fully cooked when a thermometer is inserted into the thickest part of the thigh (without touching the bone) registers 180 degrees.  Weight Unstuffed: 10-18 pounds 3 to 3 & 1/2 hours; 18-22 pounds 3 & 1/2 to 4 hours; 22-24 pounds 4 to 4 & 1/2 hours; 24-29 pounds 4 & 1/2 to 5 hours.  Weight Stuffed:  10-18 pounds 3 &3/4 to 4 &1/2 hours; 18-22 pounds 4 to 5 hours; 22-24 pounds 4 &1/2 to 5 & 1/2 hours; 24-29 pounds 5 & 1/2 to 6 & 1/4 hours.
Delicious Turkey Glaze
Ingredients:
1/4 cup sugar-free apple juice
1/3 cup melted butter or margarine
1/3 cup honey


Directions:
In a small bowl, whisk together the apple cider, butter and honey.
Brush over entire bird 45 minutes before it's done cooking.  Repeat several times before removing the turkey from the oven.
Homemade Cornbread
Ingredients:
3 cups sifted flour
3 cups yellow cornmeal
1 1/2 cups instant nonfat dry milk
3 1/2 tbsp. baking powder
2 1/2 tsp. salt
3 tbsp. sugar (optional)
3/4 cups solid vegetable shortening
3 eggs
1 cup water

Directions:
Preheat oven to 425 degrees.  Place dry ingredients in a large bowl.  Cut the shortening into the dry mix until it resembles coarse crumbs.  Add eggs and water and mix well.  Bake in an 8"x8"x2" pan for 15 to 20 minutes, or until a knife inserted into the center comes out clean.
Cornbread Stuffing
Ingredients:
Cornbread - bake in 9"x11" inch pan crumbled
12 + slices of any kind of bread cubed
1 bunch of chopped celery
1 med. onion, grated
2 tbsp. sage
salt & peper to taste
1 1/2 cup turkey broth
1 cube margarine
milk to moisten

Directions:
Crumble cornbread into a large bowl.  Add cubed bread, celery, onion, sage and turkey broth.  Melt margarine in a small sauce pan or microwave and mix in.  If mixture is too dry, add in a little milk to moisten or add more margarine.
Stuff turkey and bake accordingly.
Put remainder of mixture into a buttered casserole dish and bake for 1/2 at 350 degrees. 
Hot Mulled Cider
Ingredients:
2 qts apple cider
10 whole cloves
10 whole allspice
4 (4 inch) sticks of cinnamon
1/4 cup firmly packed brown sugar


Directions:
Combine all ingredients in a Dutch oven.  Bring to a boil, reduce heat and simmer 5 minutes.  Remove from heat and discard spices, serve hot.
