| Cheese Ball |
| Ingredients: 2 oz. package cream cheese 1/4 lb. extra sharp cheddar cheese - grated 1/4 lb. blue cheese 1 tbsp. Worcestershire sauce 1 tsp. cayenne pepper 1/2 tsp. salt 1/2 tsp. garlic powder 1/2 tsp. onion powder 1 cup chopped pecans |
| Directions: Allowe cheese to reach room temperature, then combine in a mixer bowl and beat until well blended. Add Worcestershire sauce, cayenne pepper, salt, garlic powder and onion powder. Add 1/2 cup of the chopped pecans. Chill, then shape into a ball and roll ball in remaining pecans. Chill thorougly. Serve with assorted crackers and fresh fruits. |
| Sweet Potato Casserole |
| Ingredients: 3 cups mashed cooked sweet potatoes 1/2 cup sugar 1/2 cup margarine 2 eggs, beaten 1 tsp. vanilla 1/3 cup milk Topping: 1/3 cup melted margarine 1 cup light brown sugar 1/3 cup flour 1 cup chopped pecans |
| Directions: Cook, drain and mash potatoes. Add sugar, margarine, eggs, vanilla and milk. Place in a 9x13 dish. Add topping. Bake at 300 degrees for 25 minutes. |
| Apricot Baked Apples |
| Ingredients: 8 Rome apples, cored 3/4 cup apricot preserves 1/2 cup raisins 1/4 tsp. ground ginger 1/4 tsp. ground coriander 1 tsp. ground cinnamon |
| Directions: Preheat oven to 375 degrees. Mix apricot preserves with raisins, ginger, coriander and cinnamon. Spoon apricot mixture into apples. Place apples into a baking dish. Add 1/2 inch of water. Bake for 45 - 60 minutes, basting frequently. |

| Rosemary New Potatoes |
| Ingredients: 2 pounds red new potatoes, quartered 1 tsp. olive oil 1/8 tsp. sea salt 1 tsp. dried rosemary, crushed |
| Directions: Place new potatoes in a large bowl. Drizzle with oil. Add sea salt and rosemary, mix thoroughly. Spoon onto heated non-stick baking sheet. Bake at 375 degrees for 50 minutes. |
| Steamed Broccoli |
| Ingredients: 8 cups broccoli florets 3/4 cup vegetable broth 1/4 cup water 1 tbsp. lemon juice 1 clove garlic, crushed 2 tbsp. fresh parsley, chopped |
| Directions: In a large pot, add about one inch of water. Place steam basket inside pot. Add broccoli, cover and steam 2-3 minutes. Remove from steamer to large bowl. Whisk together vegetable broth, lemon juice, garlic and parsley. Pour over broccoli and mix thoroughly. |
