Trivia
The olive oil tree found its way to Europe, from the Island of Crete, over 2500 years ago.

The Bible makes over 140 references to the olive tree and to olive oil.

The Ancient Greeks, Jews and Egyptians, used olive oil in lamps to read parchments, to anoint their kings and religious leaders, to cure a myriad ailments, both internally and externally, and to slick down athletes.

If you store olive oil away from heat and light, it can be kept fresh for up to three years.

Never refrigerate olive oil. If you have done so accidentally, let it breathe in a warm environment and you will be able to use it again.
When olive oil is called for in more than one dish you are preparing at a single meal, here's a tip:

After you have finished cooking the first dish, put a wedge of lemon and a large cube of bread into the cooking pan. Then, fry the bread and the lemon in the leftover oil. This process will refresh the oil so you can continue cooking your next dish.
