Roast Chicken with Kernels/Nuts and Old-fasshioned Vanilla Cream ROAST CHICKEN WITH PINE KERNELS/NUTS This is less a recipe than a taste of winter in Provence to transform even the most tasteless of chickens.
Ingredients
3LB/1.5 kg Roasting chicken
1Lemon
4-6 TBSP/60-90ml chopped fresh or dried herbs such as Thyme, Marjoram, Savory ( herbs of provence ) Olive oil Salt and freshly ground pepper
4-6 TBSP/50-90 ml Pine Kernels/nuts
White wine (optional) Chopped fresh chervil to decorate
Preparation
Preheat the oven to 400°F/200°C/gas 6 .Wipe inside of chicken with a damp cloth and pat dry.Squeeze the lemon halves into the chcken and place them in the breast cavity with 2 tbsp/30 ml of chopped herbs.Brush the chicken with olive oil,sprinkle with pepper and remaining herbs,except chervil,and roast the chicken for 1 hour 20mins breast side down, then 20 mins each breast side up, basting occasionally after the first 20 mins.Remove to a warm setrving dish and add pine kernels to roasting pan.Cook over a high heat,scaping the pan well with a spatula,until the nuts are toasted brown.You may want to for in a glass of the wine you are drinking as well, in which case reduce it by half and then for pine kernels and pan juices over the chicken.Decorate with chervil and serve.
