Haiti's coconut trees..
A wonderful gastronomy. As exotic an Island is Haiti so is her food. Rice and beans is a major part of the Haitian diet. But there are many flavor to Haiti dishes. Let first start with some of the exotic dishes: Soup Joumou, Grillo, Lambi, Pain patate, Acra, Marinade, Baigne, Pate, Acassan, Cremasse, Banane fris.

Pumpkin Soup 1 (Soup Joumou)

This is a very special national dish. Some Haitian family makes it every sunday, but on January 1, independance day, it is a must.

There are many variations of the recipe. Most include chunks of potatoes and other vegetables, along with macaroni or spaghetti.

Ingredients

3 cloves garlic
2 tablespoons chopped parsley
1 tablespoon fresh lime juice
1/2 teaspoon black pepper
2 tablespoons salt
3 cloves
1 1/2 pounds beef (such as chunk) cut into cubes, salt pork, a ham hock, or a beef bone, as desired
1 1/2 pounds joumou (pumpkin)
1 carrot
1 medium malanga (taro)
3 medium potatoes
1 onion
1 medium turnip
1 stalk celery
3 leaves of sorrel
3 cabbage leaves
1/2 cup raw macaroni
1 onion, chopped
2 tablespoons butter or margarine, fresh lime juice to taste 1 clove of garlic (crushed)
1 tablespoon parsley (finely chopped), Salt for taste.

Directions

Crush the 3 cloves of garlic and parsley with a pestle, then combine with the next four ingredients to make the marinade.

Marinate the meat 1/2 hour. Put the meat, with the marinade, in a large pot and add enough water to cover the meat. Cook on low until the meat is tender.

Peel and clean the pumpkin, removing the strings and seeds. cut it into two or three pieces.

Clean or peel the vegetables cut them into uniform size pieces.

Add the pumpkin and the following eight ingredients to the meat.

Add enough water to cover the vegetables. Simmer until they are tender.

When the vegetables are tender, remove the pieces of pumpkin and mash them or puree them in a blender. Stir 2 cups of water into the mashed pumpkin and return to the soup.

Bring the soup to a boil and add the macaroni. Boil, stirring occasionally, until the macaroni is tender.

Haitian Beignet (Benyen)

*Makes at least 30 Benyen

Benyen is sweet fried pastry that is sold in the street at carnival time. You can also find benyen in Louisiana.

Ingredients

2 small or 1 large overripe bananas
1/4 cup of sugar
1 egg
2 tablespoon(s) of rum
1 tablespoon of vanilla essence
grated zest of 1 lime
3/4 cup flour, sifted together with 1 teaspoon of baking powder and a pinch of salt
pinch of baking soda
1/2 cup of cinnimon sugar (1/2 cup of white sugar mixed with 1 tablespoon of cinnamon)

Directions

1. In a large bowl then mash the bananas.
2. Add each ingreadient in the order listed, beating well after each addition.
3. Cover mixture with a wet towel and place in cool spot for 20 minuets.
4. Drop the dough by tablespoon into hot oil. Fry until golden.
5. Place paper on the paper towels to drain. Shake them in a small bag containing cinnimon sugar. Serve hot or cold.
