A beautiful sweet, creamy pink sauce that covers the delicate white of the chicken. A very simple, elegant dish that is nearly effortless. Try serving it with the garlic mashed potatoes.
Ingredients:
1 lb. boneless, skinless chicken breasts
1 c. flour
salt and pepper
2 tbs. vegetable oil
1 c. port red wine
1 c. heavy cream
1/2 shallot
1 tbs. vegetable oil
- mince shallot and set aside
- clean and fillet chicken breasts
- sprinkle with salt and pepper
- coat in flour
- heat 2 tbs. vegetable oil in frying pan
- saute chicken filletes in oil. set aside
- add 1 tbs. and shallots to same pan in which you sautéed the chicken and sauté until tender.
- add 1 c. port red wine. boil down until wine is reduced by half.
- add 1 c. heavy cream, stirring frequently. boil down until sauce is reduced by half.
- serve chicken immediately with sauce.

Cook Time: about 10-15 minutes
