A light refreshing side dish that will pick up any meal. It also complements the chicken cakes beautifully.
Ingredients:
2 cups diced peeled mango (about 2 large)
1/4 c. fresh lime juice
2 tbs. minced fresh cilantro
2 tea. minced peeled fresh ginger
2 tea. sugar
1/2 tea. ground cumin
1/4 tea. salt
Prep Time: about 10 minutes
Cook Time: about 2 minutes
