A nice light dinner that is great any time of year. Serve them topped with the mango salsa to add a fresh, fruity, summer taste.
Ingredients:
2 boneless, skinless chicken breasts
1/4 c. parsley, chopped
1/4 c. scallion, chopped
1/4 c. bread crumbs
1/2 tea. garlic powder
mayonnaise
pinch of salt and pepper
- preheat oven to broil
- par cook chicken, de-bone and shed
- place chicken, chopped scallions, chopped parsley, breadcrumbs, garlic powder, salt and pepper into a bowl
- add enough mayonnaise to hold mixture together (should be a little on the wet side, but nowhere near soupy)
- form into patties
- place on non-stick cooking sheet and broil in oven until golden brown
- serve immediately with mango salsa
Prep Time: about 30 minutes
Cook Time: about 5 - 10 minutes
