Ranch Broccoli Salad

4 Cups Broccoli Florettes
� Cup chopped cooked Bacon
3 Tablespoons chopped Green Onion
� Cup Hidden Valley Ranch Dressing

Combine all the above ingredients and put in an air tight bowl with a lid. This Salad is best served immediately after mixing all the ingredients. Also very easy and simple to put together for a quick salad to go with a cookout.
Hillcrest Dinner Salad

4 Ounces of diced breaded Chicken (Tyson has a great tasting breaded chicken strips that you can dice up.)

2 ounces of each:
Broccoli Flourettes
Cauliflower
Cheddar Cheese, shredded
Diced Tomato

3 slices of Cucumber
� of a boiled Egg, cut in half to form 2 wedges

5 Ounces of tossed Salad Mix (cut some Iceburgh, Romaine, add some shredded Carrots and Purple Carrots, toss)

Your favorite Dressing (I prefer Ranch with this salad)

Now on a dinner plate, put your lettuce mix first. In a clock formation, at the 1:00 pt your cauliflower, at the 4:00 put your cucumbers (layerd), at the 7:00 put your boiled egg wedges and at the 11:00 put your broccoli florettes. Sprinkle the breaded chicken chunks in the middle of all your vegetables. On top of the diced chicken, sprinkle your diced tomatoes and then top with your shredded cheddar cheese. Now you add yourfavorite dressing, which I have to say that Ranch is the best with this one. I also serve a dinner roll or crackers with this salad which makes it a great meal.
Salads & Jellos

Rainbow Jello

1 Can of Evaporated Milk

1 Box of each kind of Jello
   Black Cherry, Cherry, Lime, Lemon, Orange, Pineapple,and Strawberry

This uses a medium size CLEAR bowl.  We always double outs because it is a huge favorite and most talked about Jello Salad.

Dissolve Black Cherry Jello with 3/4 Cup boiling water and then add 3/4 Cup cold water.  Pour into glass bowl and let it set in the fridge.  Make sure that this is firm or your other jellos will break right through it.

Dissolve Cherry Jellow with 1/2 Cup boiling water, then add 1/2 Cup cold water and a 1/2 Cup evaporated milk.  Use a spoon and gradually pour over the firmed Black Cherry Jello.  Carefully return to fridge and let that layer set.

Now, start back over with the next flavor of Jello by using the boiling water/cold water combonation and then continue the next Jello with the boiling water/cold water, evaporated milk combonation.  Rotating and Repeating until all Jellos have been used.

On some of the jellos you will not be able to find the flavor that I have listed, such as Pineapple?  You may have to use the Banana/Pineapple flavor.  You can use the Peach Jello, but watch the color coordination because Peach is close to the orange color.  Just remember, when picking out the Jellos and one isn't available in your area, go with another jello close in color, such as Grape instead of Black Cherry.
