Snickerdoodle Cookies
  • 3 cups flour

  • 1 tsp baking soda

  • 1 cup shortening (butter)

  • 2 eggs

  • 2 tsp cream of tartar

  • 2 cups sugar

  • Mix all ingredients well. Shape into balls and roll in a mixture of 1/4 cup sugar and 2 teaspoons cinnamon. Place on ungreased cookie sheet and bake at 350 degrees for about 10 minutes or until tops crack.





Lazy Daisy Oatmeal Cake
  • 1/4 cup boiling water

  • 1 cup uncooked oatmeal

  • 1/2 cup softened butter

  • 1 cup granulated sugar

  • 1 cup firmly packed brown sugar

  • 1 tsp vanilla

  • 2 eggs

  • 1 1/2 cups flour

  • 1 tsp baking soda

  • 1/2 tsp cinnamon

  • 1/2 tsp nutmeg

  • pinch of salt

  • For cake, pour boiling water over oatmeal, cover, and let stand for 20 mins. Beat butter until creamy. Gradually add sugars and beat until fluffy. Blend in vanilla and 2 eggs. Add oat mixture and mix well. Sift together flour, soda, salt, cinnamon, and nutmeg. Add to creamed mixture and mix well. Pour batter into well-greased and well-floured cake pan. Bake in preheated oven at 350 degrees for 50-55 mins. When semi-cool, frost cake with Lazy Daisy Frosting:

  • 1/4 cup melted butter

  • 1/2 cup firmly packed brown sugar

  • 3 tablespoons half and half

  • 1/3 cup chopped nuts

  • 3/4 cup flaked coconut

  • Combine ingredients, spread evenly over cake, and put under the broiler until the frosting bubbles.
