Snickerdoodle Cookies
- 3 cups flour
- 1 tsp baking soda
- 1 cup shortening (butter)
- 2 eggs
- 2 tsp cream of tartar
- 2 cups sugar
- Mix all ingredients well. Shape into balls and roll in a mixture of 1/4
cup sugar and 2 teaspoons cinnamon. Place on ungreased cookie sheet and
bake at 350 degrees for about 10 minutes or until tops crack.
Lazy Daisy Oatmeal Cake
- 1/4 cup boiling water
- 1 cup uncooked oatmeal
- 1/2 cup softened butter
- 1 cup granulated sugar
- 1 cup firmly packed brown sugar
- 1 tsp vanilla
- 2 eggs
- 1 1/2 cups flour
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- pinch of salt
For cake, pour boiling water over oatmeal, cover, and let stand for 20
mins. Beat butter until creamy. Gradually add sugars and beat until
fluffy. Blend in vanilla and 2 eggs. Add oat mixture and mix well.
Sift together flour, soda, salt, cinnamon, and nutmeg. Add to creamed
mixture and mix well. Pour batter into well-greased and well-floured
cake pan. Bake in preheated oven at 350 degrees for 50-55 mins.
When semi-cool, frost cake with Lazy Daisy Frosting:
- 1/4 cup melted butter
- 1/2 cup firmly packed brown sugar
- 3 tablespoons half and half
- 1/3 cup chopped nuts
- 3/4 cup flaked coconut
- Combine ingredients, spread evenly over cake, and put under the broiler
until the frosting bubbles.
