Here we have a favourite of mine .

A Taste of Thailand presented by Suporn Sawantragul, better known as Beer to her friends.

Green Chicken Curry



Ingredients

1 tablespoon oil 1 onion, chopped
1-2 tablespoons Green Curry Paste commercial paste
1 1/2 cups coconut milk
1/2 cup water
500 g chicken thigh fillets, cut into bite-sized pieces
100 g green beans, cut into short pieces
6 kaffir lime leaves
1 tablespoon fish sauce
1 tablespoon lime juice
1 teaspoon finely grated lime rind
2 teaspoons soft brown sugar
1/4 cup fresh coriander leaves




Instructions

1. Heat the oil in a work or a heavybased pan. Add the onion and curry paste to the wok and cook for about 1 minute, stirring constantly. Add the water to the wok and bring to the boil.
2. Add the chicken pieces, beans and kaffir lime leaves to the {wok;} stir to combine. Simmer, uncovered, for 15-20 minutes or until the chicken is tender.
3. Add the fish sauce, lime juice and rind, and brown sugar to the {wok;} stir to combine. Sprinkle with fresh coriander leaves just before serving. Serve with steamed rice.



Satay Chicken


Ingredients

1 1/2 lbs. chicken breast
1/4 teaspoon roasted coriander seeds powder
1/4 teaspoon roasted cumin seeds powder
1/4 teaspoon pepper
1/4 teaspoon turmeric (roots) powder
1/2 teaspoon curry powder 3 slices galangal
1/2 tablespoon finely chopped lemon grass
1 tablespoon salt
5 garlic cloves
1 cup coconut milk
2 tablespoons vegetable oil
2 tablespoons sugar small wooden skewers


Instructions

1. Slice the chicken breast finely, width approximately 1 1/2 inches.
2. Pound together, or blend in a blender, the coriander seeds, cumin seeds, pepper, turmeric, curry powder, galangal, lemon grass, salt and garlic.
3. Pour the blended ingredients into the coconut milk. Add sugar and vegetable oil and blend again so that all the ingredients are well mixed.
4. Add the chicken slices and marinate for 2 hours.
5. Thread the chicken slices onto the skewers. 6.Pour the marinating sauce into a pot and heat until boiling.
7. Place the chicken slices over a charcoal grill (barbecue) and apply the sauce to the chicken while turning .
8. When cooked through, serve with Satay sauce and cucumber sauce.
