Chocolate Chip Cookies

2 � cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
� cup firmly packed brown sugar
� cup granulated sugar
1 cup softened butter or margarine
1 teaspoon vanilla extract
2 eggs
1 package (12 oz) semi-sweet chocolate chips
1 cup chopped nuts (optional)

Preheat oven to 375�F.  Combine flour, salt and baking soda in a bowl and set aside.  Combine brown sugar, granulated sugar, softened butter or margarine and vanilla; beat until creamy.  Add eggs and beat.  Add dry ingredients and mix well.  Stir in chocolate chips and chopped nuts (if desired).  Drop mixture by rounded teaspoonfuls onto ungreased cookie sheets.  Bake 8 � 10 minutes.  Makes approximately 100 � 2 inch cookies
Old Fashioned Banana Pudding

1-1/2 cups sugar
4 Tablespoons butter
3 Tablespoons cornstarch
1/2 teaspoon salt
4 cups milk
4 eggs, beaten
1 Tablespoon vanilla flavoring
Vanilla Wafers
4 large bananas

Mix together the sugar, cornstarch and salt in the top of a double boiler. Stir in the milk and cook over hot water until thick, about 10 minutes, stirring frequently. (NOTE: You may also wish to simply cook the pudding in your microwave, and eliminate the need for a double boiler. Just be sure to stop the microwave and beat the mixture periodically while it is cooking. Also, just follow the remaining instructions included here if you decide to microwave.)
Beat the eggs, then stir in about 1/2 cup of the hot mixture and return to the double boiler with the remainder of the hot mixture (or to the microwave). Stir and cook about 4 to 5 minutes longer. Remove from heat and add butter and vanilla flavoring. Beat until smooth with a rotary beater. Pour into a container and place in the refrigerator until completely chilled.
Just before serving, remove the pudding from the refrigerator. Line individual bowls with vanilla wafers. Peel and slice bananas onto the vanilla wafers. Place 1/2 cup vanilla pudding on top of the vanilla wafers and sliced bananas. Finish off with a squirt of whipped cream and serve. Serves 8
Mama's Banana Pudding

2-3 bananas, sliced
1 box vanilla wafers
1 cup sugar
2 tablesspoons flour
2 eggs
2 cups milk
1 teaspoon vanilla


In a large bowl, place one layer of sliced bananas, then a layer of wafers until bowl is filled, making sure top layer is wafer.  Set aside.  In a medium saucepan beat eggs, add sugar and mix well, add flour, milk, vanilla.  Bring to boil, pour over bananas and wafer mixture.  Chill and serve.
