| Chocolate Eclair Ingredients: 3 tsp. cocoa 24 graham crackers 2 small pkgs. instant vanilla pudding 3 cups milk 2 tsp. vanilla divided 1 - 8 oz tub of Cool-Whip 1/3 cup butter 2 1/2 cups powdered sugar 1/4 cup water Directions: Mix pudding, milk, 1 tsp. vanilla, fold in Cool-Whip. Heat butter and water and remove from heat. Add 3 heaping tsps. cocoa, 2 1/2 cups sugar and 1 tsp. vanilla. Layer graham crackers, pudding mixture, repeat and pour cocoa mixture on top. | Fried Apple Pies 8 ounces dried apples 2 tablespoons butter or margarine 1 tablespoon cinnamon � cup nutmeg 2 tablespoons lemon juice 1 cup water � cup sugar Soak apples overnight in water to cover. Drain and rinse well. Combine 1 cup water and apples in a large pot and bring to a boil. Reduce heat and cover. Simmer 30 minutes or until tender. Cool. Stir in butter, cinnamon, lemon juice, sugar and nutmeg. Mash well and set aside. Pastry 4 cups all-purpose flour 1 cup butter or margarine 2 teaspoons baking powder 1 teaspoon salt � to 1 cup cold water Combine, flour, baking powder, and salt, cut in butter until mixture resembles coarse meal. Sprinkle the water over the mixture and then stir until dry ingredients are moistened. Shape into a ball. Wrap in waxed paper and chill at least 1 hour. 2. Divide dough into thirds and roll each piece to 1/8 inch thickness on waxed paper. Cut into 4 inch circles. Place about 1 tablespoon of the apple mixture on circles. Dip fingers in water and moisten the edges of the dough. Fold in half, making sure edges are even. Press the edges together with a fork. Heat cooking oil to 375�F in skillet, cook until pies are golden brown. Turning once. Drain on paper towel. If you like, you can sprinkle cinnamon sugar on top. |
| Best Brownies BusyCooks.com Ingredients: 1/2 cup butter, melted 1 cup white sugar 2 eggs 1 teaspoon vanilla extract 1/3 cup unsweetened cocoa powder 1/2 cup all-purpose flour 1/4 teaspoon salt 1/4 teaspoon baking powder 3 tablespoons butter 3 tablespoons unsweetened cocoa powder 1 tablespoon honey 1 teaspoon vanilla extract 1 cup confectioners' sugar Preheat oven to 350 degrees F. Melt 1/2 cup butter. Remove from heat and stir in sugar, eggs and 1 teaspoon vanilla. Mix well. Add in 1/3 cup cocoa, 1/2 cup flour, salt and baking powder. Mix well. Spread batter into one 8x8 square baking pan. Bake for 25 - 33 minutes. Do NOT overcook. These are better the next day. To Make Frosting: Combine 3 tablespoons butter, 3 tablespoons cocoa, 1 tablespoon honey, 1 teaspoon vanilla and 1 cup confectioners' sugar. Frost brownies while they are still warm. Makes about 16 brownies |
