The Hoban Cookbook

The newest addition to the Hoban web page!  Looking for that meal mom always used to make, or maybe that great appetizer that Margie brought to Christmas last year...look no further.  Do you have a recipe to contribute?
(I hope so, cause Mom can't be the only one giving out secrets!)
So with out any further ado...Hoban Recipes!

Mom's* Irish Bread       Contirbuted 3/6/00

3 cups of  flour
1 tsp baking soda
2 tsp baking powder
1/2 tsp salt
2 tbsp sugar
3/4 cup raisins
2 cups buttermilk

Sift all dry ingredients together, add buttermilk, mix well until consistant.  (Use a spoon or it will get all over your hands and won't come off, ask KD)  Put dough in a pie pan, mark an X across the top, and place in oven.  Bake @ 350 degrees for 1 hour or until golden brown, and fully cooked (toothpick test) 
*  Mom has made it look easy but it only looks easy, it will take some practice to get it down!

Robin's Swiss Enchiladas

1 pkg boneless, skinless chicken breasts
1 lb jack or pepper jack cheese, grated
5 sm cans of chopped green chilies
chopped green onion
flour tortillas
(2) 1/2 pts heavy whipping cream
(2) chicken boullion cubes

Boil and shred the chicken, set aside to cool.  Grate cheese, chop onion, and grease a 13x9 and 8x8 pyrex dish.  Take a tortilla, add some chicken, chilles, onions, and cheese.  Then roll it up and place in pyrex dish, continue till they are done.  Over low heat, disolve the chicken boullion in the cream, then pour over your pans of enchiladas.  Bake at 350 degrees until golden brown.

Cream Cheese Brownie Pie
This recipe just won the 1 million dollar prize at the 50th annual Pilsbury bake-off in San Francisco

1 Pillsbury pie crust (15 oz. pkg) softened as directed, or makeyour own single pie crust
1 (8 oz) package of cream cheese, softened
3 TBSP sugar
1 tsp vanilla
3 eggs (divided use)
1 (15.1 oz package) Pilsbury Thick n' Fudgy Hot fudge swirl Deluxe Brownie Mix
1/4 cup oil
2 TBSP water
1/2 chopped pecans (optional)

Heat oven tp 350 degrees.  Prepare pie crust as directed on package for one 9' crust.
In medium bowl, combine cream cheese, sugar, vanilla, and one of the eggs.  Beat until smooth.  Set aside.  Reserve hor fudge packet from brownie mix for topping.  In a large bowl, combine brownie mix, oil, 1 TBSP of the water and remaining 2 eggs; beat 50 strokes woth a spoon.
Spread 1/2 cup of the brownine mix over bottom of crust-lined pan.  Spoon and carefully spread cream cheese mixture over brownie layer.  Top with the remaining brownie mix; spread evenly.  Sprinkle with pecans.  Bake at 350 for 40 to 50 minutes, or until center is puffed and crust is golden brown.  If necessary, cover crust with strips of foil after 15-20 minutes to prevent excessive browning (pie may have cracks on surface.)
Place hot fudge from packet in small microwave-safe bowl.  Microwave on high for 30 seconds.  Stir in remaining tablespoon of water.  Drizzle fudge over top of pie.  Cool 3 hours or until completely cool.  Store in the refridgerator.
