Baked Meatballs

3-4 pounds 75% ground beef
1 teaspoon each of basil, rosemary, thyme, oregano, cilantro, tarragon
a generous amount of grated Parmesan cheese (probably a cup or more)
a very heaping spoonful of minced garlic (probably came to about 4-5 tablespoons)

Add all the herbs to a mortar and pestle and grind them up to release their flavor and aroma. In a large mixing bowl, combine the beef, herbs, cheese and garlic. I will sometimes use a couple eggs to help hold things together, but not usually. Form these into meatballs about 2 to 2.5 inches in diameter and arrange on a broiler rack lined with foil. Bake at 350�F for 30-35 minutes.

Serves a ravenous family of 5-6 with all children under 10.
