Kachumar
Kachumar is a very spicy, very quick, fresh relish that's the Indian subcontinent's version of salsa. It's delicious and ideal for the home gardener--it uses up not only tomatoes but also green peppers and cucumbers. (From The Great Tomato Book by Sheila Buff)
1 1/2 cups finely chopped red onion
1 cucumber, peeled, seeded, and diced
2 medium ripe, fresh tomatoes, seeded and diced
1 green bell pepper, seeded and coarsely chopped
3 tablespoons chopped fresh cilantro
1/2 teaspoon hot red pepper flakes
1/2 teaspoon ground cumin
3 tablespoons lemon or lime juice
1/2 teaspoon salt

Combine all the ingredients in a nonreactive (glass, ceramic, or plastic) bowl and toss well. Let stand at room temperature for thirty minutes before serving. Season with additional salt if desired.
