There should always be some flowering and maturing
of the fruits of nature
in the cooking process.

And, indeed, is there not something holy about a great kitchen? The scoured gleam of row upon row of metal vessels dangling from hooks or reposing on their shelves till needed with the air of so many chalices waiting for the celebration of the sacrament of food.
--Angela Carter, British novelist
When our earliest ancestors gathered around the communal cooking fire, they were probably preparing a vegan meal. Nuts, grains, fruits, leafy greens, roots, and seeds made up the bulk of their diets. (And bulky it was--they had no need for Metamucil!) Many scientists believe a vegan diet--or a strict vegetarian diet, with no animal products such as milk or eggs--is good for us modern humanoids as well.

But these days, with the communal cooking fire located at McDonald's, we've become separated from our roots, so to speak. In search of pantry staples, or just dinner, we are often confused as we push our shopping carts through Safeway: What do I do with this tofu, anyway? Where do they keep the miso? Why can't I find "Portobello" in the wine aisle?

If you've decided to go vegan, or are merely experimenting with a healthier lifestyle, here are tips and advice to get you started.
