Cajun Spice Mix:

Start with 2 tablespoons salt. Add:

2 tablespoons onion powder
2 tablespoons garlic powder
2 tablespoons dried oregano
2 tablespoons dried basil
1 tablespoon dried thyme
1 tablespoon black pepper
1 tablespoon cayenne, or less for sensitive palates
1 teaspoon white pepper
5 tablespoons mild paprika

Place all ingredients in a jar and shake vigorously, or place in a food processor and pulse until mixed thoroughly. Adjust the seasonings if you want a hotter or milder mix.

One popular brand of cajun seasoning mix available nearly everywhere is Tony Chachere's Cajun Seasoning Blend. This mix comes close to approximating his if you can't find it. If you prefer to add salt separately on an as-needed basis, leave out the salt and preceed from there.
From Chef Emeril Lagasse, of television fame, comes another spice mix.

Chef Emeril's Creole Seasoning Mix:


2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon onion powder
1 tablespoon black pepper
1 tablespoon cayenne pepper
1 tablespoon dreid oregano
1 tablespoon dried thyme

Combine all ingredients and stor in an airtighit container. Makes about 2/3 cup.
