RECIPES FOR LARGE FAMILIES
Larger families have to find even more ways to economize what they have to put on the table so these recipes should help. We are only a family of 3 but I make these once a week and then freeze them for a later date which helps us with our food bills as well :)
              Mince

3 lbs ground beef
2 pcks. onion soup mix
2 beef boullion cubes or similar
salt, pepper and small amount of soya sauce to taste.

Place ground beef in dutch oven and fill just over half full with water. Add soup mix, boullion and spices. Bring to a boil and boil for 30 minutes. Add more water as necessary. After thirty minutes or so fill water almost to the top of the dutch oven and add a mixture of either flour or cornstarch with cold water to thicken. Serve over mashed potatoes.

I know the concept of boiled hamburger doesn't sound good but its like a hamburger stew and it tastes great !!!
                 Chili
2 lbs ground beef
2 cans chili kidney and pinto beans
1 large can kidney beans
1 large can crushed tomatoes
1 large can diced tomatoes
mexican chili spice, onion and garlic powder, black pepper and salt.
Brown ground beef until fully cooked along with the spices. That way the taste works right into the chili. When browned, drain grease and add beans and tomatoes. Check for taste and serve over either a bed of rice or buttered bread.
Tomato Pasta Vegetable Soup
1 lb. frozen mixed veggies
3 handfuls pasta (your choice)
spaghetti broken up, rigatoni, small shells or any combination thereof works great
1 cup minute rice
3 tins tomato soup
Bring to a boil the veggies, pasta, rice, salt and pepper, until the veggies and pasta are almost cooked. Add in the 3 tins of tomato soup and voila you have a dutch oven full of soup that can feed a small army !!! Serve with buttered bread and a sprinkle of parmesan cheese on top of soup if you like.
