Roasted Turkey with Mandarin oranges
Thaw out turkey then slowly run your fingers under the breast skin until you have made a pocket. Mix together thyme, rosmary, dry mustard, basil, garlic powder or fresh chopped garlic, onion powder, pepper and salt then take 1/2 lb. of butter and squeeze the spices into it thoroughly.
Take the spiced butter and push it under the breast skin then push down on the breast to spread it evenly. Save a little for the thighs. Place 2 long cuts across the thighs to the bone then rub the rest of the spiced butter into the open cuts.
In the inside of the turkey shake the same spices but of course a little more salt. Then peel 2 to 3 mandarin oranges and place inside the turkey. Tie the legs together and place on a baking pan with at least a 2 inch ledge. Roast slowly at 250 degrees F until tender then turn up the heat to 375 degrees F to brown at the end. If it is browning too quickly cover those parts with either a peice of brown paper or tinfoil shiny side out. You don't need to baste this bird but you can if you  wish. DO NOT add any water to the pan. This is the most delicious bird you will ever eat I promise. You can also use this recipe on roast chicken. DO NOT eat the oranges just toss them away when done.


                                                      Turkey Gravy


Place roasting pan on the stove over 2 burners and turn on halfway from medium to high and boil the juices. Skim some of the grease off the top and then add either a chicken broth cube or packet. Add 1 to 2 cups water depending on how much gravy you need to make. Take gravy mix packet if you can find them in the store or cornstarch if not and add cold water to it then slowly mix into the juices until desired consistancy.
Sweet and Sour Ribs or Chicken

1 c. brown sugar
1/2 c. ketchup
1 pckg. onion soup mix
1 can pineapple tidbits with juice
2 tbsp. dry mustard

Cut up chicken or ribs and place in a small roasting pan. Pour sauce over top and bake for 375 degrees F for 1 1/2 to 2 hrs until meat falls off the bone.

For bbq leave out the pineapple tidbits with juice and use 1/4 cup of vinegar instead.
Brown Sugar Pudding
1/2 c. cocoa
1 3/4 c. flour
2 tbsp. sugar
1/2 tsp. salt
2 tsp. baking powder
1/4 c. cold butter cut up
Combine the flour, sugar, salt , cocoa, and baking powder and mix well. Cut in the 1/4 c. butter until finely crumbled.

1 c. milk
1 egg , beaten
1 tsp. vanilla
Combine the liquids and stir well into the flour mixture. It will look lumpy and this is the way it should be.

2 c. brown sugar
2 tbsp. butter
1 1/2 c. boiling water
Put this mixture into the 8 inch square pan and stir until dissolved. Then drop the other mixture on this by spoonfuls. Bake for 35 mins at 350 degrees F.
Serve hot, warm or cold and spoon sauce over the top as you serve it.
