Sweet and Sour Sauce

This is a recipe given to me by my adopted mother (Cantonese). Irene is one of three "mum's" I have. One of which is my real mum. This sauce is gorgeous. I do not like the ones in restaurants, but this is superb, and I thank "mim" for divulging the recipe, it really is sweet yet sour!

Ingredients

Method

  1. add a little oil to a large sauce pan, and heat until hot, but not smoking
  2. add onion and stir fry to soften
  3. add one cup of water, one cup of white vinegar, one cup of sugar and bring back to just boiling
  4. add the pineapple and bring up to the boil
  5. when boiling add teh cornstarch and thicken until desired thickness of sauce is reached
  6. Add some tomato paste for colouring and a little flavour (not too much!)
  7. Serve with crispy fried chicken, or pork balls, or another batter covered main dish.
