Sweet and Sour Sauce
This is a recipe given to me by my adopted mother (Cantonese).
Irene is one of three "mum's" I have. One of which is
my real mum. This sauce is gorgeous. I do not like the
ones in restaurants, but this is superb, and I thank
"mim" for divulging the recipe, it really is sweet yet
sour!
Ingredients
- 1 small(ish) onion, chopped into large-ish pieces
- 1 small can pineapple chunks
- 1 handful of red and green capsicum pieces, smallish
pieces
- 1 cup vinegar (white)
- 1 cup sugar
- 1 cup water
- tomato paste to "taste" / colour
- corn starch for thickening, combined with enough water to
make the cornstarch not gooey, but very runny.
Method
- add a little oil to a large sauce pan, and heat until
hot, but not smoking
- add onion and stir fry to soften
- add one cup of water, one cup of white vinegar, one cup
of sugar and bring back to just boiling
- add the pineapple and bring up to the boil
- when boiling add teh cornstarch and thicken until desired
thickness of sauce is reached
- Add some tomato paste for colouring and a little flavour
(not too much!)
- Serve with crispy fried chicken, or pork balls, or
another batter covered main dish.
