Koala Bear's Inspiration
Serves: as many as you make it for
Note that this recipe has no
totally fixed measurements, and all vegetables, fruit, meats, and
such are to be done to the amounts you want. This recipe is
"free form" and allows for expeimentation.
Ingredients
- Olive Oil (for cooking)
- Garlic (about 2 cloves)
- Onion (one chopped)
- Egg Plant (sliced, salted for 30 minutes or more prior to
cooking)
- Green capsicum (green pepper in UK) (sliced.
Alternatively red or yellow, or a mixture)
- Potato (sliced thinly)
- Fresh Tomato (Chopped. Alternatively some tinned tomatoes
to suit)
- Herbs: Basil, Parsley, Salt, Pepper, Oregano, etc (to
taste)
- Rump Steak (sliced thinly)
- Small Macaroni (cooked til al-dente)
Method
- Heat olive oil, add garlic and onion to soften.
- Add sliced potato, egg plant (wash excess salt off egg
plant) and start cooking.
- Add sliced capsicum, fresh tomato, and herbs.
- Simmer for a while.
- Add rump steak and simmer until meat is tender, and
cooked.
Serve
- Serve with macaroni in bowl, with the sauce poured over
the top.
