Irresistable Peanut Butter Cookies
This recipe comes from the package of Butter Flavor Crisco Sticks and is the best peanut butter cookie recipe I know of. Even my mother, who has been baking cookies a long time, recently converted to this one.
1� cups packed light brown sugar
� cup creamy peanut butter (crunchy will work, but it is harder to roll)
� cup shortening or Butter Flavor Crisco Stick (I use the sticks)
3 tablespoons milk
1 tablespoon vanilla extract
1 egg
1� cups flour
� teaspoon baking soda
� teaspoon salt
Heat oven to 375�F. Place sheets of foil on countertop for cooling cookies
Combine brown sugar, peanut butter, , shortening, milk and vanilla in large bowl. Beat at medium speed of electric mixer until well blended. Add egg. Beat just until blended.
Combine flour, baking soda, and salt. Add to creamed mixture at low speed. Mix until just blended.
Drop by rounded measuring tablespoonsful of dough 2 inches apart onto greased baking sheet. Flatten slightly in crisscross pattern with tines of fork.
Bake one baking sheet at a time at 375�F for 7 to 8 minutes, or until set and just beginning to brown. DO NOT OVERBAKE. Cool 2 minutes on baking sheet. Remove cookies to foil to cool completely.
