Oatmeal Raisin Cookies
This Betty Crocker recipe is the best oatmeal raisin cookie recipe I know of, and it is surprisingly easy.
1 cup sugar
1 cup packed brown sugar
� cup butter or margarine, softened
� cup shortening
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon vanilla
� teaspoon baking powder
� teaspoon salt
2 eggs
3 cups quick-cooking oats
2 cups all-purpose flour
2 cups raisins (or chopped nuts, if desired)
Heat oven to 375�. Mix all ingredients except oats, flour, and raisins. Stir in oats, flour, and raisins. Drop dough by rounded teaspoonfuls about 2 inches apart onto an ungreased cookie sheet. Bake about 10 minutes or until light brown; cool. Makes about 4 dozen cookies; 110 calories per cookie.
