| CARAMELIZED CARROTS. |
| INGREDIENTS; |
| 1lb 2oz carrots half a bunch flat leafed parsley 2 tablespoons olive oil salt and black pepper 1 teaspoon brown sugar |
| METHOD; |
| Peel and slice the carrots, roughly chop the parsley. Heat the oil in a large frying pan, add the carrots and saute for about 3 mins, or until softened. Add 4fl oz water to pan, season, cover with a lid and simmer for 5 mins. Remove lid and cook until all the water evaporates. Sprinkle sugar over carrots. Stir continuously over a high heat for 2 mins until the sugar caramelizes. Use a slotted spoon to transfer to plates, garnish with parsley and serve. |
