VEGETABLE CROSSTINI.
Ingredients;
French stick
olive oil
tin of creamed mushroom
a mixture of fresh vegetable, i.e.
   carrots
   broccoli
   turnip
   onion
   courgette
   pepper
oregano
basil
parsley
Method;
Prepare and cook the vegetables until tender.

Cut french bread in half lengthways and scoop out some of the soft bread inside.

Lay the crusts upright on a baking tray and brush the edges with a little bit of olive oil.

Divide the tin of creamed mushrooms into each half of the bread.

Mix the coooked vegetables with a tablespoon of olive oil mixed with some oregano, basil and parsley then pile generously on top of the creamed mushroom.

Bake at gas mark 7 for 30 - 40 mins.

Lovely served with mint jelly.
