SAUTEED FRUIT SALAD

4 firm kiwi fruit

1 papaya

2 mangoes

2oz butter/margarine

7oz can pineapple chunks in juice

1 tablespoon clear honey

15 oz can lychees in syrup

juice of 1 lemon

2 teaspoons brown sugar
Peel and slice the kiwi fruit.

Peel the papaya , remove seeds and chop.

Cut the mangoes into cubes.

Melt butter in a pan, stir fry the papaya and mangoes for 3 mins ove a high heat.

Drain the pineapple, add to the pan with the kiwi and the honey.

Leave to caramelize for 5 mins, stirring gently.

Drain the lychees and add to the pan with the lemon juice. Cook for 3 - 4 mins until mixture becomes syrupy.

Sprinkle over the sugar and cook for 1 min, stirring.

Serve.
