RATATOUILLE STIR FRY
INGREDIENTS;
METHOD;
1 large aubergine

2 red peppers

2 courgettes

4oz sun dried tomatoes

6oz baby plum tomatoes

2 cloves garlic

2 tablespoons olive oil

1in piece root ginger

3 tablespoons balsamic vinegar

5oz baby spinach leaves

Salt and Pepper
Cut the aubergine into 1in chunks and put into a colander over a plate, sprinkle with salt and allow to stand for 30 mins.

Rinse under cold running water and gently pat dry with kitchen paper.

Halve and deseed the pepper.

Cut the peppers and courgettes into 1in chunks.

Thinly slice the sun-dried tomatoes and half the plum tomatoes.

Peel and chop the garlic.

Heat the oil in a large pan and stir-fry the aubergines, peppers and courgettes for 8 mins.

Peel and chop the ginger, add it to the pan along with the garlic, sun-dried tomatoes and plum tomatoes.

Sti fry for one minute.

Season to taste and serve immediately.
