RAINBOW STYLE FISH

4 x 6oz pieces Cod Fillet

2 cloves garlic

1 red pepper

1 yellow pepper

1 green pepper

1 red chilli

2oz butter

finely grated rind and juice of half an orange

half a pint of dry white wine

salt and black pepper

basil leaves and orange slices to garnish
Crush the garlic, half, deseed and slice the peppers into thin strips.

Deseed and finely chop the chilli.

Melt the butter in a large pan.

Add garlic, peppers and chilli and cook for 5 mins, stirring occasionally.

Stir in orange rind and juice, wine and seasoning.

Bring to the boil.

Arrange the fish on top of the vegetables.

Cover the pan with a tight fitting lid, reduce heat slightly and simmer for 10 mins or until fish is opaque and flakes easily with a knife.

Season.

Serve immediately.
