| 4 x 6oz pieces Cod Fillet 2 cloves garlic 1 red pepper 1 yellow pepper 1 green pepper 1 red chilli 2oz butter finely grated rind and juice of half an orange half a pint of dry white wine salt and black pepper basil leaves and orange slices to garnish |
| Crush the garlic, half, deseed and slice the peppers into thin strips. Deseed and finely chop the chilli. Melt the butter in a large pan. Add garlic, peppers and chilli and cook for 5 mins, stirring occasionally. Stir in orange rind and juice, wine and seasoning. Bring to the boil. Arrange the fish on top of the vegetables. Cover the pan with a tight fitting lid, reduce heat slightly and simmer for 10 mins or until fish is opaque and flakes easily with a knife. Season. Serve immediately. |
