| 4 slices wholemeal bread, cubed 1 teaspoon ground coriander 1 tablespoon grated lime peel 2 egg whites 4 teaspoons chilli powder 4 skinless boneless chicken breasts 2 teaspoons garlic powder Non-stick cooking spray |
| In a food processor, combine bread, coriander, lime peel and chilli powder. Process until mixture forms crumbs. Spray large baking sheet with non-stick cooking spray. Dip chicken into egg whites, coating both sides, and then into crumb mixture, coating both sides. Refrigerate for 30 minutes. Bake at Gas mark 5 for approximately 30 minutes. Serve. |
