Cinnamon Sugar Cookies
2 3/4 cups sifted flour
2 tsp. cream of tartar
1 tsp. baking soda
1/2 tsp. salt
1 cup butter
1 1/2 cups sugar
2 eggs
1 egg white, slightly beaten
2 Tbsp sugar
1 Tbsp. cinnamon

Heat oven to 350 degrees. Sift flour, cream of tartar, baking soda and salt together. Beat butter, the 1 1/2 cups sugar and eggs together in a bowl until light and fluffy. Add dry ingrediants; blend. Shape dough into small balls; dip in egg white, then in mixture of the 2 Tbsp. of sugar, and 1 Tbsp. of cinnamon. Place about 2 inches apart on greased cookie sheets; press down centers with tines of fork. Bake 12-15 minutes or until lightly browned. Transfer to wire racks; cool. Makes about 5 dozen.
