| (Ice Cream Cake continued) Transfer 3/4 cup remaining topping to pastry bag fitted with a large star tip. Set aside. Spread top and sides of remaining topping and freeze 10 minutes. With small knife separate 8 Oreos into 2 circles each leaving filling intact. Cut each circle in half. Press cookie halves into topping all around the bottom and top edges of the sides of the cake. Quarter the remaining cookies. Make rosettes around the top edge of the cake and garnish the rest of the top with cookie quarters. Freeze until ready to serve. Let stand at room temperature 5 to 10 minutes before cutting. (Cutting is easier with an electric knife) |

| CHICKEN ROLL-UPS 6 whole chicken breast filets 6 slices of ham medium sliced 1 medium tomatoe pealed seeded and chopped dried sage lightly sprinkled 1/3 cup fine breadcrumbs 2 tbl parsley !/4 cup oleo or butter melted Place chicken between 2 layers of plastic wrap and pound thin. Remove from wrap. Place a ham slice and cheese slice on each chicken piece to fit. Top with tomatoe. Sprinkle with sage. Fold and roll up. Seal ends. Combine crumbs, parmesan and parsley. Dip chicken rolls in milted oleo and roll in the crumb mixture. Bake at 350 degrees for 40 to 50 minutes until golden brown and crisp. |

| MOM'S CRUSTY CORNBREAD (8" x 9" pan) Heat oven to 375 degrees Combine in a bowl: 1cup flour 1/4 cup sugar 2 tsp baking powder 1/2 tsp salt Add to the dry ingredients and stir until well mixed: 1 cup lowfat or skim milk 1/4 cup melted oleo (not hot) 1 egg-beaten Pour in buttered or oiled and lightly floured pan. Bake for 20 minutes or until golden brown and tooth pick comes out clean when inserted in the middle. |

| HARVARD BEETS (delicious and sooooooo easy!) 3/4 cup sugar 2 tsp cornstarch 1/3 cup vinegar 1/3 cup water or juice from can of beets 2 cans sliced beets 3 tbl butter or oleo 1/4 tsp salt 1/8 tsp pepper Combine sugar and cornstarch. Add vinegar and water or beet juice. Boil for 5 minutes. Add beets and simmer til mixture becomes thick about 10 minutes. Add butter, salt and pepper. |
