Monthly Updated Receipt--Dec--Stew Lamb Belly With Sugar Cane
Chinese elders in general are quite reluctant to beef. Some for religious reason and some for health. They believe beef is "poison" in nature. Though I don't believe in this and value a lot in beef's nutrient. i find this lamb receipt for a subsitute.
Most stew lamb dish in restaurant are quite greasy, not to mention the badly stewed one which are nightmare to elders.
This receipt I found is not strong in taste, very soft. The beauty of it is there are not a lot of herbs or seasoning in it. Natural is beauty.

Ingredients:

  • Lamb belly 2.5 catties
  • sugar cane 6-8 short pieces, each seperated in 4 vertically
  • water chessnut 12 pieces
  • red wine / chinese yellow wine (1 bowl)
  • light soya sauce 1 Tbsp
  • dark soya sauce 1 tsp
  • garlic 4 cloves
  • ginger 1 big piece (3-4")

  1. Before washing the lamb, use salt to rub it all over, set for 2 hours.
  2. Rinse in water throughly.
  3. Poach the lamb in boiling water for 10 minutes,
    then rnise with cold water throughly, set aside.
  4. In a Wok, add a bit of oil, fry the garlic and ginger.
  5. Add in lamb, stir fry intil brown in the surface.
  6. Sprinkle wine and covered.
  7. Use a deep pot , lay sugar cane on the bottom of pot to form a layer,
    then water chessnut and lamb on top layer.
    Add water to just cover the meat, add light and dark soy sauce.
  8. Use big fire until liquid is boiled, then simmer about one and a half hour,
    there should still have liquid left.
  9. Seasoned to taste.
Note:
1. Use Chinese Black goat is better with more meat,
2. don't use cornflour, the dish sould have a soup base,
3. the dish should be light in color.
