One Pot Chicken, Pesto & Rice

(from the WW Week 5 book - Guesstimating Points)

 

Ingredients:

1 tsp Olive Oil (I use Cooking Spray)
1/2 Onion, sliced (I use 1 onion)
1/3 cup rice
1/2 tsp each of cumin, coriander & curry powder
1 tsp chicken stock powder
1/2 cup water
1 small skinless chicken breast fillet (sometimes I use thigh fillet)
1 1/2 tbs sun-dried tomato pesto (I just use 1 tbs)

 

Method:

Heat oil (or cooking spray) in a saucepan, add onion, rice & spices and cook for 1 to 2 minutes.  Add stock powder and water.  Spread chicken with pesto and add to pan.  Reduce heat and simmer, covered, for 20 - 25 minutes or until rice and chicken are cooked.

7.5 points if using WW recipe
6.5 points if use my ingredients (ie, no oil, and less sun-dried tomato pesto)

This is a yummy recipe.  I leave out the oil, and use less tomato pesto to lower the points.  I just don't think the chicken needs all that pesto on it.
I have also cooked this without the tomato pesto and the chicken (ie just the rice, spices and onion).  It is a delicious rice dish, and would only be 2.5 points.  My fiancee loves the rice cooked like this as well.  I usually eat this dish with steamed vegetables.  If I don't have a lot of points left for dinner, then I just make the rice with steamed vegetables.
This dish is quick and very simple to make.  Best of all, I only dirty one saucepan making the dish!
