Potato Salad
4 potatoes (preferably red) scrubbed & cut in chunks
4 or 5 boiled eggs, cut up sorta big
2 stalks celery, chopped very fine
Enough mayonnaise to coat well (not salad dressing)
2 or 3 sweet pickles, chop fine
1 med. Onion, chopped fine
1 tbsp. Mustard
salt & pepper to taste
Boil potatoes till tender & drain. Save water for soup. (Waste not, want not). Add all other ingredients with enough
mayonnaise to coat well. Eat warm or can refrigerate. We always have potato salad gumbo.
